The Chardonnay is from low-yielding Gin Gin vines that are now over 20 years old. Painstakingly converted them to cane pruning (from the established spur pruning). The parcels were hand-harvested, foot stomped and naturally fermented in a mix of concrete egg (20%) and old barrels (80%). It only received a rough filtering to, keep the wine as close to the vineyard as possible. Fresh, crisp, organic Chardonnay.

Earthy, smoky, gravelly nose, with hints of cured meats and gunflint, intriguing and complex. Robust and very dark on the palate, plush and powerful, mouthcoating density of fruit, that is ripe and textural. A substantial wine with longevity and presence.

Pinot noir sourced from the Coal River and Derwent valleys in Tasmania and the Upper Yarra Valley in Victoria. Bright ruby with ripe dark and red cherry fruits, raspberry coulis and wild strawberry with hints of leaf litter, spice, softly spoken vanillin oak, char siu, mushroom broth, amaro herbs and wildflowers. Graceful and pure with excellent tension between fruit and mineral acidity, fading off slowly in a fan of spiced red fruits.

Artfully brewed to sit between traditional American and Australian pale ales, Colonial's master brewers searched the world for the perfect combination of hops, blending USA favourites with Australias hop heroes to create the perfect pale. The result is a tropical-tinged treat that's a glowing golden in colour, with subtle hints of passionfruit, pine and spicy botanics. Smooth and approachable but packed with aromatic hops, Colonial Pale Ale is brewed to linger on the palette, not overpower it.

Red cherry, plum and cinnamon spice, vanilla bean and a muscular perfume. The palate is light on its feet, with ripe, bright, fresh and crunchy red berry fruit, a fine earth grip and delicate finish, bring on the duck!
