The Ethereal One celebrates wines with ethereal qualities - so delicious and graceful in style they seem not to be of this world. This blend from Fleurieu and Adelaide Hills with bright ruby red and violet hues is medium bodied, dominated by fruit aromas of cherries and red currants with savoury notes of baked quince and dried herbs.

Fruit is machine-picked at night to ensure cooler temperatures and retain fruit aromatics. On arrival at the winery, the fruit is gently pressed to minimise phenolics and maximise fruit flavour and delicacy. All base wines undergo 100 percent malolactic fermentation and remain on lees until required for blending and stabilising. The final base wine components are then bottle fermented and spend a short period on tirage lees, providing further yeast complexity in the final wine.

Tempus Two Cabernet Merlot is well-balanced and full-bodied, exhibiting rich berry fruit and chocolate flavours. Matured in both French and American barriques for ten months to capture and enhance the complexities of these two varieties

Light, lifted aromatics of white florals, lemon citrus and pear. A fresh and vibrant wine with flavours that flow effortlessly to fill the palate and finish long, pure and refreshing.

A pioneer of Merlot, James Irvine has produced an attractive plump style with leafy plum and mulberry flavours. The perfect match with crown of lamb.

Fermentation begins in the winery before the part fermented juice is transferred to bottle to finish the job. Flavours of strawberries and cream with tart raspberry it has a persistent fizz that knows how to quench a thirst. A perfect match for sunshine and good times.

Gorgeous Grenache displays a beautifully perfumed nose with hints of violets and wild strawberry. The palate is succulent, juicy and Pinot-like in its profile while the finish is savoury and moreish. Sourced from a number of vineyards in The Barossa and McLaren Vale regions of South Australia. All vineyards are vinified in small batches, separately. Wild ferments, whole bunch inclusion, larger oak and no filtration or fining define the natural character of the wine. This medium bodied wine has ripe, juicy, raspberry and red berry fruit flavours with a hint of pepper and spice with sleek tannins, giving it a smooth finish with good length.
