The Barrys’ vineyards along the valley’s Eastern Ranges, which sit between 480 and 500 metres above sea level...as Tom Barry explains: “You have 35 degree days but it will get well down below 10 degrees in the nights which really helps you build flavour and ripen the grapes evenly without high alcohol levels."
