Casks of ex-Bourbon, ex-Sherry and White Oak were chosen from our Bothwell Distillery to form a bright and luscious fruit-filled base, which was finished in equal parts ex-Seppeltsfield PX Sherry and ex-Lark Quiet Cannon Rum casks. This duo of cask favourites sees surprising notes of dried papaya and Quiet Cannon rum collide with deep forest fruits, cherries, and plum pudding before finally giving way to an incredibly fresh and complex finish. Our Limited Release Rum & PX Sherry is a classic reimagined.

An incorrect image is shown (not cask strength). Our Peated Single Malt, delivered straight from the cask is our “biggest” and most awarded whisky in our range. In fact it is one of the biggest Australian whiskies available today. The malted barley is “peated” in northern Scotland and exhibits a more “Highland” style peat, which produces an “earthier” rounded peat smoke with minimal “medicinal/iodine” notes. If you are looking for the ultimate flavour experience that you will continue tasting long after the glass is dry, this whisky is for you Tasting Notes: Nose: A rich subdued peat aroma combined with a natural leathery earthiness with overtones of kumquat and fruit mince tart. Sweet but not sickly. Palate: The palate reveals a tobacco leaf earthiness with layer upon layer of complex smoky peat that lingers on the lips and palette demanding just one more sip. Finish: Astonishingly long and complex, an exotic mix of experiences.

This mixed case contains three award winning Gins from Lawrenny, each suited to different time of day.Lawrenny Van Diemen's Gin profile reflects a bright, sunny spring day at the Estate. The fruity notes bloom from the glass and the fresh herbal fragrances intertwine with the soft, sweet palate leaving you with a lingering finish that ensures you will be coming back for more.Highlands is a refreshing and crisp Gin, with notes from the unique blue cypress to the bright fruitiness of the grapefruit, orange and buchu, all while an ever present mint note lingers over the palate. The sweet earthiness of ginger, cubeb pepper and grains of paradise add a gentle bite of piquancy while chamomile provides weight and sweetness.The 1818 Settlers has a mild smokiness, not usually associated with Gin, from a careful blend of the intense botanical brown cardamom that graces the finish, without dominating the dried fruit notes below.

Proudly, a wine style that hasn’t succumbed to the dictates of fashion or commerce. St Henri is rich and plush when young, gaining soft, earthy, mocha-like characters as it ages. It is matured in old, 1,460 litre vats that allow the wine to develop, imparting minimal, if any oak character. Although a small proportion of Cabernet is sometimes used to improve structure, the focal point for St Henri remains Shiraz.

Expect a spirit of tremendous structure and elegance, (not the rusticity that we have now been conditioned to expect from the Rum category), with a bright, silky palate offering waves of dried stone fruits, candied citrus, subtle resin and lifted floral notes. The finish is as fine as could be, with almost invisible spirit and a vibrantly fresh close.
