The palate is balanced with soft raspberry notes, leading to a dry earthy finish from the Native Limes and Blood Orange.

Poltergeist Gin is produced in small batches at the historic Shene Distillery in Pontville, Tasmania. Poltergeist Unfiltered retains the full flavour profile of all twelve botanicals, completely covering the front, middle and back of the pallet with a long lingering finish. It may ghost over ice due to the density of flavouring oils derived from the botanicals. The flavour profile is earthy and robust, and the balance of brawny botanicals like liquorice root, cardamom, orris root and Tasmanian pepper berries, with the more traditional citrus and nutty gin flavours, is unique. Drink it straight over ice, in a classic martini or a negroni.

Melbourne Gin Company Dry Gin shows a lovely combination of earthy spices dominated by cinnamon and sandalwood giving bold voice to the fresh backbone of lemon myrtle, grapefruit and orange zest. Rosemary and juniper show the classic gin flavours with a creamy palate and a smooth lingering finish.

Our tropical take on a traditional sloe gin; swapping sloe berries for locally grown Far North Queensland Davidson Plums. The plums are steeped for up to 3 months to produce a truly unique sloe style gin. With an earthy aroma that is reminiscent of plum jam, stewed rhubarb and a touch of sweetness. Four Pillars sourced olive leaf and olive oil from Cobram Estate, in northern Victoria after visiting Cobram Estate during olive harvest. Using olive leaf and oil from the Picual, Hojiblanca and Coratina varieties. The aroma, flavour and texture of fresh olive is stunning, and they did a year of trials before finalising the recipe for this gin.The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. Fresh ingredients were vapour infused while the others macerated in the pot. This gin is savoury, textural and bright. Perfect for any Martini Gibson, dirty, or dry with a twist. For a longer drink try it in a Spanish-inspired gin & tonic, with rosemary and lemon!
