Four Pillars sourced olive leaf and olive oil from Cobram Estate, in northern Victoria after visiting Cobram Estate during olive harvest. Using olive leaf and oil from the Picual, Hojiblanca and Coratina varieties. The aroma, flavour and texture of fresh olive is stunning, and they did a year of trials before finalising the recipe for this gin.The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. Fresh ingredients were vapour infused while the others macerated in the pot. This gin is savoury, textural and bright. Perfect for any Martini Gibson, dirty, or dry with a twist. Forty Spotted Rare Tasmanian Gin is hand distilled in small copper pot stills using the steeping method of Gin production and use of traditional botanicals of juniper berry, coriander and lemon peel creating a traditional London Dry style, but incorporating something a little bit special to give this Gin a unique finish.

This gin has been crafted using both maseration and infusion methods to create a rose pink colour. The colour comes from grapefruit, pomegranate, blood orange, lemon and organic rose petals. We recommend a garnish that is not too overpowering such as cucumber. Conveniently, it is not necessary to squeeze lemon or lime as it is already packed with citrus. Enjoy this gin with tonic, in a cocktail or on the rocks.
