The Shinobu Distillery in collaboration with Niigata Beer Distillery is located in the Japanese seaside region of Niigata on the countrys western coast. The area is famous for its Three White Treasures: snow, rice and sake which have been cultivated there for centuries. Shinobu Pure Malt whiskies are crafted by master blender, Mr. Usami Ken who blends malts aged in sherry, bourbon and Hogshead casks before finishing them in Japans prized Mizunara Oak. Famous for imparting rich, honeyed flavors of apples, pears, cloves and nutmeg, Mizunara Oak has been used in Japan since the 1930s and is now sought-after by whisky makers around the world. Nakano BC's Junmai-shu has a gentle taste with rice flavor typical of its hometown Wakayama. The sake is made with "namachozo" process, which means that it is only heated once, instead of twice, so that you can enjoy the freshness and calm aroma of nama sake. It has a more gorgeous aroma than regular junmai-shu, and is slightly acidic so it can be enjoyed on the rocks. We recommend this sake for occasions when you want to drink it cold.

This is a special umeshu or plum liqueur because it steeps the ume plum in premium Ginjo sake made from Yamada Nishiki rice. The ume is steeped in the sake for six months then left to age for a further two years after the fruit is removed. The final liqueur is complex and finishes rich and long with characters of prune, honey and almond.
