Akashi whisky is the only whisky in the world that is made by a Toji (grand-master in the art of sake making) by implementing sake-making methodologies into the whisky making process. The distil pot used is smaller than those used by both Scottish and other Japanese distilleries, which in turn, decreases the levels of fusel alcohol. As a result, Akashi whisky does not require as long of an ageing process, while its core malt (cask strength) is smooth and delicate.

Talisker is one of Scotland's remotest distilleries which produces a dram with trademark smoothness. Their 10 year old has a powerful peat and sea-salt nose; smoky sweetness with malt flavours and developing warmth with a huge, peppery finish. Aberlour a'bunadh is a single batch single malt that is sourced exclusively from the Speyside region - abunadh meaning 'The Origin' in Gaelic. Straight from the cask without chill-filtration and alcohol reduction, this whisky is heavy bodied and jam packed full of flavour. Abunadh is not for the faint hearted as with each batch of Abunadh they mature the Aberlour spirit exclusively in Spanish Oloroso Sherry Butts. The nose, is simply Christmas in a glass. Fresh, sweetly fruity and smooth-bodied, Caol Ila 12 YO Single Malt Scotch Whisky delicately balances a range of tastes. The clean, appetising nose shows subtle citrus fruit with just a puff of smoke. Firm and smooth, it begins sweetly then yields a fragrant smokiness and a sweet-smoky, lingering finish.

Made from the blending of malts from the two distilleries of Yoichi and Miyagikyo, this whisky was the pride and joy of its creator Masataka Taketsuru, founder of Nikka and the father of Japanese Whisky. Light golden honey in colour with candied nuts, walnuts and hazelnuts on the nose as well as delicate and gentle smoke coming through with hay. Forward and straight pallet with juicy mouth feel, yet retaining a very gentle and sophisticated heat. Sweet apricots and peach dominate at first, leading to vanilla and subtle hints of ripe grape. Complex and long on the finish with lingering taste of dry herbs, leather and sweet pastry.

Bridging the boundary of the Highlands and Lowlands, Glengoyne is a unique distillery in that they don't use peat smoke to dry their barley, rather they simply use warm air. This gives the whiskies produce a feel of grace and subtlety. Their 12 Year Old Single Malt has a nose of lemon rind and candied apples and glimmer of coconut. The palate is dense and flavoursome courtesy of the hand-selected sherry casks that also impart a textured, long lasting finish.
