Fresh, sweetly fruity and smooth-bodied, Caol Ila 12 YO Single Malt Scotch Whisky delicately balances a range of tastes. The clean, appetising nose shows subtle citrus fruit with just a puff of smoke. Firm and smooth, it begins sweetly then yields a fragrant smokiness and a sweet-smoky, lingering finish.

The Quarter Cask is a strong, double cask matured, non-chill filtered malt from the iconic Islay distillery, Laphroaig. With a nose of burning peat embers and hints of coconut and bananas that is then followed by a palate that is deep and complex with smoky flavours. Still quite gentle with a hint of sweetness, this 48% Single Malt has a long, spicy and smoky finish that seems to last an eternity.

To create this truly unique whisky, we selectively sourced rare malted rye and the finest malted barley from progressive malt houses, paired them with virgin American oak casks air-dried for 36 months and let it all mature in the maritime air of coastal Sydney. Our preference for malted rye over the far more commonly used unmalted rye affords this whisky a point of distinction evident upon the very first sip. This layered, aromatic spirit offers notes of spiced custard, ginger, stone fruit and baked apple pie with a fresh herbal finish that lingers on the palate.

Laphroaig, founded in 1815 by brothers Donald and Alexander Johnston, has an extremely rich history; neighbourly disputes with Lagavulin and many ownership changes to name a couple. The 10 Year Old Single Malt is Laphroaig's signature malt that is full sparkling gold in colour and has that signature rich smoke and seaweed character with a hint of sweetness. Surprisingly the palate is rich with subtle sweet hints and complex layers of salt and peatiness that evolve on the palate and continue to the long and dry finish.

Shinobu Whisky is hand crafted by the creative distiller, Mr. Usami, by carefully selecting whisky from around the world which are first reserved in ex-sherry and ex-bourbon casks and then finishing them with precious Japanese Mizunara oak in Japan. The result is a unique fusion of flavours and dynamic explosion in palate yet so smooth and easy to drink. All natural with no colouring.

The Shin Malt Whisky is crafted by Mr. Ken Usami, the master blender of Shinobu Distillery who selected finest malt whiskies and finished them in casks made of Japanese Oak, Mizunara Wood. “Shin” stands for “Integrity”, one of the core principles of Samurai tradition. Shin Malt Whiskies are well balanced between the woody flavor and incense of sandalwood from Mizunara Oak and the bold aged maltiness, which brings The Shin Malt Whisky a fruit forward and with a bit pepper and spice aftertaste. Yoichi Single Malt is described as bold and strong. Pleasant peaty notes and smokiness originate from traditional direct coal-fired distillation accented with a briny hint delivered by the sea breeze during the ageing process.

Shinobu Lightly Peated Pure Malt WhiskyShinobu Lightly Peated Pure Malt whisky NAS and 10Y are the first peated whisky to be released by Shinobu distillery. Peated whisky was sourced from selected distilleries from mainly highland and speyside regions and carefully blended by the master blender Mr. Usami Ken and finished in Mizunara wood for more than 6 months. The Shinobu Distillery in collaboration with Niigata Beer Distillery is located in the Japanese seaside region of Niigata on the countrys western coast. The area is famous for its Three White Treasures: snow, rice and sake which have been cultivated there for centuries. Shinobu Pure Malt whiskies are crafted by master blender, Mr. Usami Ken who blends malts aged in sherry, bourbon and Hogshead casks before finishing them in Japans prized Mizunara Oak. Famous for imparting rich, honeyed flavors of apples, pears, cloves and nutmeg, Mizunara Oak has been used in Japan since the 1930s and is now sought-after by whisky makers around the world. A sweeter style of Scotch, Glenkinchie is bright gold in colour and very approachable. The nose carries aromas of vanilla, citrus and wild flowery and is reflected on the palate and supported by a surprisingly creamy texture.

The Nikka Coffey Malt is the result of a unique distillation process in Coffey type column stills, which are normally used for grain whisky production.As such, this unique 100% Coffey malt is categorized as a grain whisky, and offers a surprisingly rich texture with deep oaky notes.
