Dalwhinnie is the highest of all the distillers in Scotland and place so to take advantage of the cleanest springwater possible. Dalwhinnie has a smokey, floral aroma and a delicate palate of heather and honed malt. A serious Whisky, yet approachable to the beginners.

Bridging the boundary of the Highlands and Lowlands, Glengoyne is a unique distillery in that they don't use peat smoke to dry their barley, rather they simply use warm air. This gives the whiskies produce a feel of grace and subtlety. Their 12 Year Old Single Malt has a nose of lemon rind and candied apples and glimmer of coconut. The palate is dense and flavoursome courtesy of the hand-selected sherry casks that also impart a textured, long lasting finish.

Japanese whisky is not only Suntory or Nikka, there are many other less known distilleries whose reputation continues to grow. And for this new tasting, They choose a blended malt, the White Oak Tokinoka blended malt. The White Oak distillery, located in the city of Akashi (Hyogo Prefecture), was the first to obtain a license for distilling whisky in 1919. Built in 1888 for the production of sake and shochu, at the beginning the distillery produced only blend whisky in a traditional way and specially reserved for the domestic market. Then the site was modified in 1984 to start producing whisky in bigger quantities. The Eigashima Shuzo Company owner of the distillery, produced since 2007 several single malts named Akashi.

The Nikka Coffey Malt is the result of a unique distillation process in Coffey type column stills, which are normally used for grain whisky production.As such, this unique 100% Coffey malt is categorized as a grain whisky, and offers a surprisingly rich texture with deep oaky notes.

This Scotch Whisky is handmade with rich, fruit cake flavours and a sweetness that emerges from the combination of Sherry wood and the small Stills of our old farm distillery. Despite being such a small distillery, Edradour produces more whiskies than most other distilleries. Glengoyne can claim to have the slowest distillation process in Scotland - a process that makes this distillery very unique, much like their positioning on the Highland/Lowland border. The 15 Year Old Single Malt is supremely complex, sweet and well rounded. There is a wonderful spicy oak finish that compliments the luscious palate that is enhanced by the process of air drying the barley, never peat dried. The hand-selected ex Sherry casks also provide a richness that continues into the finish of this fine whisky that is ideally suited to enjoying neat.

Since inception in 1881, Bunnahabhain has been producing an Islay malt a little different from most. By not heavily peating their malted barley, the resulting whisky is a clean, pure and distinctive malt. Embodying the 'gentle taste of Islay', Bunnahabhain 12 Year Old is an approachable, welcoming whisky. Ex-sherry cask influence and being non-chill filtered add to the layers of complexity exuding from this premium whisky.
