SHINOBU (meaning Forbearance in Japanese) Whisky is hand crafted by the creative master blender, Mr. Usami, by carefully selecting whisky from different distilleries which are first reserved in ex-sherry and ex-bourbon casks and then finishing them with precious Japanese Mizunara oak.

Our Cotswolds Single Malt Whisky is the first whisky ever distilled in the Cotswolds. We use 100% locally grown, floor-malted barley and mature the whisky in first-fill ex-Bourbon barrels and reconditioned red wine casks. Rich, fruity and sippable with notes of honey, Seville orange marmalade and dark red fruits. Tasting Notes Nose: Notes of honey and butterscotch layered with light fruits (peaches & apricots), a hint of marzipan. Palate: Strong notes of tannin-rich malt, oils and dark sugar with lots of spice, caramelised Seville orange marmalade. Finish: Long and resinous, with dark red fruits and a hint of treacle.

Creamy mouthfeel packed full of rich dark fruits and sweet malt notes, which give way to sweet vanilla and cocoa interspersed with cinnamon spice. The whisky is matured in a combination of French and American oak ex-wine barrels plus finished in rare Morris Muscat barrels, previously used to create multi-award winning Muscat. COLOUR: Deep rich copper with reddish hues. NOSE: Rich with dates, figs and sweetness of dark molasses. PALATE: Well balanced and complex. Dried fig, sweet malt, vanilla and spices with creamy mouth feel. FINISH: Superb oak influence, lovely finish with satisfying after taste that lingers on the palate.

Pale lemon in the glass. Highly aromatic nose of citrus fruits, orange, and tangerine, ripe melon, custard, and mushrooms. More restrained on the palate, while there is some melon, pear, and white peach flavours, it also tastes of earthy mushrooms, faint herbal notes and (not surprisingly) rice.

The Dewazakura Karesansui Tokubetsu Junmai 10YO NV 720ml is a truly unique and exquisite sake from the renowned Dewazakura brewery in Japan. Crafted from the finest rice and pure mountain water, this sake has been aged for an impressive 10 years, resulting in a complex and refined taste. Double matured in port casks, this malt is a toast to the Scottish traders who braved the high seas and were instrumental in founding the port wine trade, shipping it to the world. 'Port Ruighe' (pronounced 'Portree') is the Gaelic spelling of the once bustling trading port on Skye. The Port finish combines Talisker's powerful maritime character with succulent sweet notes of rich berry fruits for a superb contrasting taste experience.

Mars Iwai Tradition Japanese Whisky is soft and rounded, yet full bodied and mellow. The nose gives sweet honey, leading to a complex, peaty full bodied palate which gives sweet peat, orange marmalade, maple, burnt sugar cane, cedar and cigar.
