Australian Pale Malt, distilled in our towering twin copper pots and aged in first-fill ex-Bourbon American oak. Matured to an assertive, balanced complexity over four Riverland summers. A contemporary take on a London Dry Gin Distilled with 24 botanicals including juniper, liquorice root, cassia bark and cardamom for depth and spice, and bergamot orange and kaffir lime for citrus. Rose, lavender, chamomile and linden flowers add floral notes, while local honey delivers a smooth finish. TASTING NOTES A classic gin at heart, full bodied and fresh with depth, clarity and flavour. Paying homage to the historical sailors, this Gin meets the test they required for “proof” that the spirit delivered was as promised by the British Royal Navy. Using the base of our Signature Gin the intensified strength provides an enhanced flavour experience where each botanical dances on the palate. A punchy hit of fragrant aromas from the citrus, and the subtle sweetness of premium vanilla. On the palate, the strong peppery pine taste of juniper combines with the citrus flavours and finishes with a super warmth from our spice combination. A Gin full of flavour that won’t disappoint.

Four Pillars Navy Strength is a gin very much in the style of the Rare Dry Gin but with the volume turned up slightly beyond 11. At 58.8% ABV the gin can support some more robust and interesting botanicals, so there are three new botanicals that are both new (and fresh), including fresh turmeric and ginger. Together they have heightened the spiciness of the gin, and the turmeric in particular has added weight and a lovely earthiness to the palate. Also in the botanical basket about half the normal oranges have been replaced with some explosive native finger limes, grown in Byron Bay. They have an intensity of flavour and acid that is almost impossible to believe, and in the basket they help the gin attain super citrus notes and lovely high-toned freshness.

A Gin of great freshness, lemony with an explosivity in the mouth. All the ingredients coming into the composition of GENEROUS ORGANIC are: Juniper, Citrus, Mandarin, Red Pepper, Combava & Coriander. Some of them are produced by maceration, others by distillation, using exclusively traditional methods. This naturality can be clearly perceived in the tasting: the style is clear, the flavours are precised and well harmonised.

Each 500ml hand-crafted cocktail lid is manually dipped in wax with a silver foil swing tag, presented in a hand wax dripped, thick cardboard cylinder box. As each Gift Box is manually waxed, no two boxes are the same, some minor organic imperfections may be visible.Old Fashioned:The Old Fashioned is said to have been first created at the Pendennis Club, a famous gentlemens club in Louisville, Kentucky in 1881 in honour of Colonel James E. Pepper famed bourbon distiller, who then introduced it to New York high society during his frequent visits to the Waldorf-Astoria Hotel bar in New York. They clearly embraced it, given how the infamous Mad Men had such a taste for it 80 years later in the 1960s Manhattan advertising scene. The Old Fashioned has had a makeover or two over its time. But this smooth, bitter, sweet simplicity of Bulleit Straight Bourbon Whiskey, traditional Angostura Bitters, and sugar cane syrup is a tonic that Don Draper himself would approve of.Serving Suggestions:Serve Dr Onyx Old Fashioned gently swirled in a short glass over ice, with a twist of orange zest.
