Starward Wine Cask Single Malt Whisky is uniquely Australian, crafted exclusively with local wine barrels for maturation resulting in a Whisky with balanced aromas of raisins, bananas and a touch of balsamic lead to clove, toffee and nougat. The palate is filled with red berries, hints of cinnamon and a variety of savoury and spice driven notes. The aim with this Gin was to only use Tas native botanicals. I discovered some very impressive native berries, leaves and seeds however they could only be wild harvested which meant I could not get enough quantity to make it practical enough for an ongoing production. I have still been able to use some Tasmanian native botanicals however I have now broadened the list to only Australian native botanicals (plus the Juniper). Iam using 6 Native Australian botanicals with 3 of them never used before in any other Gin.All of my botanicals are vapour infused which is a technique not used too often with Australian Gins. Vapour infusion (as opposed to steeped) will give the Gin a much more delicate and subtle bouquet. My Gin is designed to smell beautiful. There will be delicate petal and citrus aromas with a hint of cut hay.

Geometric is an unapologetically a bold juniper and coriander gin. Along with subtle Cape Malay style cinnamon, cardamom and clove lined with the earthy indigenous buchu and Cape snowbush.Botanicals are bound together with Cape brandy, a masterfully textured spirit which gives this gin its uniquely rich and round profile. Prominent juniper and earth notes followed by subtly spiced citrus. Juniper, Cape snowbush and clove interlace around the soft-edged texture of the spirit. Cardamom and coriander pull the spirit to the back of the palate for a surprisingly long finish. The 20 high quality botanicals that go into 44n include Cade (a species of juniper typical to the Mediterranean), Mimosa, Rose Centifolia, Immortelle and Verbena which meld together with our unique process. Top notes The first thing that hits your nose is fresh zingy lemon peel and grapfruit. The aroma of a marine breeze, samphire, is punctuated by touches of mimosa. Cade adds woody, piney facets.
