After visiting Cobram Estate during olive harvest we realised olive oil could be a brilliant botanical alongside olive leaf. The aroma, flavour and texture of fresh olive is stunning, and we did a year of trials before finalising the recipe for this gin. The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. Fresh ingredients were vapour infused while the others macerated in the pot. We have used olive leaf and oil from Picual, Hojiblanca and Coratina varieties. This gin is savoury, textual and bright. Perfect for any Martini - Gibson, dirty or dry with a twist. For a longer drink, try it in a Spanish-inspired gintonic, with rosemary and lemon. A 100% rye made in Brunswick, Melbourne from all-Australian grain grown in the Mallee. Following double distillation the whisky is matured in a two-storey tall bespoke solera system composed of new American oak and x Australian wine barrels.

Six Dogs Blue derives its name from the Blue Pea flower (Clitoria Ternatea), an antioxidant and aphrodisiac in traditional medicine. As chance would have it, ‘Blue’ is also the name of the smallest dog in our pack of six. The infusion of Blue Pea gives the Gin its striking blue colour. An alchemy between neighbours, friends, nature and of course, six faithful dogs.

This delectable drink is the result of a sustainability project that began when South African bee conservation company, Bee Smiths, approached Six Dogs Distillery to relocate distressed bees to the farm on which the distillery is situated. Their new home, found on the intersection of the Fynbos and Karoo biomes, proved to be the ideal location for the bees.
