Hobart Whisky Signature is a marriage of small carefully selected American oak ex-bourbon casks. After visiting Cobram Estate during olive harvest we realised olive oil could be a brilliant botanical alongside olive leaf. The aroma, flavour and texture of fresh olive is stunning, and we did a year of trials before finalising the recipe for this gin. The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. Fresh ingredients were vapour infused while the others macerated in the pot. We have used olive leaf and oil from Picual, Hojiblanca and Coratina varieties. This gin is savoury, textual and bright. Six Dogs Pinotage Stained Gin is the love child of Six Dogs Gin and our neighbours highly prized block of Pinotage grapes. Our gin is distilled in small batches through generous quantities of juniper and fresh citrus. It is then placed in tanks together with handpicked Pinotage grapes to allow the gin to extract the deep red essence. The result? Six Dogs Pinotage Stained Gin. An alchemy between neighbours, friends, nature and of course, six faithful dogs.

Traditionally favoured by Indigenous societies for their medicinal benefits and protein content, native Green Ants are a unique bush tucker hand harvested in the Northern Territory by the Motlop family of the Larrakia people. The Green Ants display vibrant coriander and kaffir lime leaf flavours, with a citrus and lime burst on the palate further enhanced by Finger Lime.
