Forester Estate is owned by Vignerons Kevin and Jenny McKay. It’s situated in Yallingup, in the northern Margaret River region. Kevin’s motto is to build complexity and texture into his wines literally from the ground up! The superb wines are made by Todd Payne who has had “a distinguished career, starting in the Great Southern, then the Napa, Plantagenet, Esk Valley in Hawke’s Bay, and on to the Northern Rhône” (Halliday). St Hugo Signature Collection Cabernet Sauvignon 2022 is medium crimson in colour with garnet hues. A floral violet and spice lift, with a delicate balance of dried herbs, raspberry, and blackcurrant fruit notes entwined with supportive integrated elevating oak on the nose. The palate is classical and varietal at its core. Varietally tannins that build complimented by a bright blackcurrant floral fruit spectrum, enhanced with subtle refined oak.
