The aroma, flavour and texture of fresh olive is stunning, and they did a year of trials before finalising the recipe for this gin.The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. Fresh ingredients were vapour infused while the others macerated in the pot. This gin is savoury, textural and bright. Perfect for any Martini Gibson, dirty, or dry with a twist. For a longer drink try it in a Spanish-inspired gin & tonic, with rosemary and lemon!

In looking to create a gin with enough presence to shine in strong cocktails, the more delicate, floral botanicals have been left out. So it's adios strawberry gum leaf, granny smith apples, lemon myrtle and dried chamomile, and hello loads of juniper and the earthy depth of liquorice root.

Gin is created using limonene, one of the main compounds found in cannabis plants. The limonene adds an ultra-rich profile to the spirit, mingling alongside notes of juniper, mandarin and lime, and finishing with soft spice.
