David Hook has over 25 years experience with Tyrrell's and Lake's Folly, and in that time established his family vineyard in the Lower Hunter Valley. The Pinot Grigio is a warm climate interpretation, full of rich, sweet fruit and spice with acidity in support.

Complex mineral and flint aromas with a palate that has good length. Tyrrell's Stevens Semillon has wonderful balance between the fresh citrus flavours of youth and the aged 'toasty' characters. It is great with seafood dishes.

The wine shows lifted tropical fruits with hints of musk, spice and citrus florals. A full flavoured fruit-packed palate, with ripe tropical fruits, well balanced with great mouth feel and a long crisp finish.

The freshness of this wine demonstrates why Hunter semillon is possibly the most under-rated wine style in the world. The aromas centre around lemon, lime and fresh hay, and the palate is decidedly linear, based on a spine of acidity. This exceptional wine, at six years of age, is still at least five away from its optimum drinking window. Vat 47 from the Hunter Valley has a silky bouquet of melon stone fruit and creamy oak that is followed by a palate of extraordinary balance and length. An absolute classic and will only get better with some medium term ageing.

The wine shows an amazing length of flavor and mouthfeel with strong, clean acid on the finish and some secondary characters derived from the slight solids ferment. A great example of Hunter chardonnay with its the citrus/acid backbone, which is a benefit of no malolactic fermentation.

The Scarborough Offshoot Verdelho starts with aromas of green tea with hints of tropical fruit, pink lady apples and honeysuckle. The palate shows botanical characters of sage, orange blossom, citrus rind, mint and lemon pith.
