This aromatic white blend is a fusion of 92% Sauvignon Blanc grapes with 8% Semillon grapes. These fruit parcels were harvested in the cool of the night and then cold pressed. The juice obtained was fermented in stainless steel before bottling. The resulting blend displays a pale green colour. The lifted bouquet exudes fresh aromas of guava, with hints of Semillon grapes evident in the background. The medium-bodied palate initially presents flint dry and racy fruit flavours, balanced by crisp acidity. The finale is excellent and lingering. Made for consumption upon release, this enticing white wine has the potential to be cellared for 2 to 3 years from vintage. Modern white wine making techniques were used with temperature control critical from the vineyard through to the winery. The fruit was de-stemmed and crushed then must chilled and pressed off the skins quickly. It was allowed to settle for 72 hours before being racked in a clarified state to a fermentation tank. Each variety was kept separately with a range of different yeast being employed on the two different parcels. It was then transferred to temperature controlled steel tanks. The Deep Woods Estate Hillside Semillon Sauvignon Blanc is a wine that can be enjoyed on release but will find further complexity over the next two to three years. The palate is clean and lively with tremendous depth of ripe stone-fruit and the aroma of nectarine, ripe citrus and white blossom.

Vasse Felix Classic Dry White contains flavours of gooseberries that dominate the aroma of this blend with hints of stone fruit and perfume in the background. Fresh and lively with lovely texture and good length of flavour it is ideal summer drinking.
