The wine exhibits a nose with lifted aromas of passion fruit, guava and exciting tropical fruits. The palate is fine with a lovely, nervy acidity and an effortlessly long and dry finish. This single vineyard Sauvignon Blanc was fermented cool and matured over three months on lees to build complexity and palate length.

In the glass: Pale lemon with a green hue. On the nose: Gooseberry, grapefruit and smokey oak aromas. On the palate: Layered and complex with lingering flavour persistence, lovely savoury layers of citrus fruit and faint tropicals, refreshing acidity and obvious yet good quality oak. The team at Hay Shed Hill has selected the best vineyard blocks on their Margaret River estate to create the Block Series. The fruit for this wine comes from some of the oldest Semillon and Sauvignon Blanc vines in the region. Full straw with yellow green hue, it presents a plush honeydew melon and warm honey mix with guava and lime juice generosity. The developing palate has a mouth-filling and harmonious mix of lime and melon with deeper traces of tropical fruits and touches of biscuit and honey chiming in on the finish. A complex barrel fermented style and ready to drink.

Umamu Estate only releases their wines when theyve had time to develop in the bottle and this Sauvignon Blanc Semillon is drinking beautifully now. The Deep Woods Estate Hillside Semillon Sauvignon Blanc is a wine that can be enjoyed on release but will find further complexity over the next two to three years. The palate is clean and lively with tremendous depth of ripe stone-fruit and the aroma of nectarine, ripe citrus and white blossom.

Modern white wine making techniques were used with temperature control critical from the vineyard through to the winery. The fruit was de-stemmed and crushed then must chilled and pressed off the skins quickly. It was allowed to settle for 72 hours before being racked in a clarified state to a fermentation tank. Each variety was kept separately with a range of different yeast being employed on the two different parcels. It was then transferred to temperature controlled steel tanks. Ø FOOD MATCHING Best served chilled and enjoyed with a light meal such as chicken or seafood.

Fragrant and energetic, the nose has an abundance of lycee, kiwifruit and blackcurrant with lime curd and lemon sherbet. Thai basil, sliced fennel, ginger and citrus blossom sit neatly in the background. A gentle entry leads to a delicately textured mid palate. Bursting lemon, lime and grapefruit dominate throughout with bright acidity, a slightly savoury line and a talc-like finish.

The wine displays fresh green tinges to a very pale straw colour. Typical cool-climate Sauvignon Blanc and Semillon aromas of lively tropical fruits and fresh herbaceous grassy characters make up an intense bouquet. The palate is fresh and lively with classic Sauvignon Blanc and Semillon characters and a fine structure that are an indication both of the quality of the vintage and the use of only free-run juice. The Hay Shed Hill vineyard is situated on a picturesque property that was established as a group settlement farm for returned soldiers from the First World War. Known as Sussex Vale the property was originally a dairy farm. The current homestead, considerably renovated, still has much of the original Group Settlement look and feel. Vines were first planted in the early 1970s. In the late 1980s the vineyard was bought by the Morrison Family and the wine brand Hay Shed Hill was established taking its name from the local reference to the hay shed located on the property. The sister label, Pitchfork, was developed to complement the single vineyard Hay Shed Hill label. A series of ownership changes saw numerous alterations to labels, wine style and distribution until the current group of partners bought back the farm and the brand in late 2006 and returned to the original concept of producing wine with integrity that expresses the quality of the site.
