A wine-based aperitif, Byrrh has the specific characteristic of being flavoured with quinine. Its alcohol content is 18°. The basic grapes, mainly the Carignan and Grenache varieties from the hillsides of Roussillon, are transformed into mistelles (partly fermented grape juice), which are then blended with selected dry red Roussillon wines. Byrrh is drunk as an aperitif. It is best served cool, at approximately 16°, and goes well with a twist of lemon zest or a little Crème de Cassis.

A vatting of single malts aged between 12 and 27 years in oak casks and resulting from a cognac (double) distillation method with a mash exclusively made of « Malt » (germinated barley). It has been reduced to 43% alcohol by volume. Beige amber tint.

The Kornog Roc'h Hir Single Malt (Peated) is matured in Bourbon casks for three years. It is a bright pale, straw gold color. The nose begins with aromas of wet wool and lanolin. Once opened the peat brings forward dried apple, light cocoa, and cinnamon flavours. This is followed with an oily, cereal, crisp malt delivery with the finish upping the richness adding cocoa-laced peat, walnut slice and lanolin carrying through to the aftertaste. Absinthe has a long and illustrious history that is intertwined with prohibition during the time of World War 1 when Absinthe was outlawed. A lot of intense research has been undertaken by the Distillerie des Terres Rouges to revive this ancient liqueur which has been carried out with the highest respect for its old traditions. Mythe is distilled with aniseed, badiane, vervain, hyssop, and, of course, wormwood which produces a full, layered bouquet that is then followed by a balanced palate. The distinctive bitterness of the wormwood makes its presence known, but doesn't overwhelm the other botanicals. Best served in the traditional manner with 20mL poured into a glass followed by placing a sugar cube on an Absinthe spoon above the liqueur before pouring 100mL of cold water over the sugar. Enjoy the aromas and flavours that have long been forbidden.
