One of a number of single cask bottling we've received from Martinique rhum agricole producers, Clément. This one was matured for a decade, from October 2003 to December 2013, in cask number #0310021 before being bottled at 42.8% ABv, with an outturn of 440 bottles

Distilled in the old columns of the Factory of Simon-located just in front of The Rum Company-small columns and entirely made of copper, this rum old Martinican was developed in exceptional conditions. The peculiarity of this columns lies in the exhaling of intense perfumes that give the rum a particularly expressive and round profile. This lot was chosen with care by the Maître de Chai and the oenologist of the House, Robert Peronet and Gaëlle Hardy. It is an assembly composed of rums aged between 3 and 10 years in red barrels of Bourbon. It is the gourmet and exotic notes of vanilla, coconut and chocolate that rub shoulders with those of dates and subtle tobacco, which seduced the experts Clément.

Matsui Mizunara Cask Single Malt Japanese Whisky single malt whisky distilled in the rich, natural environment of Tottori and aged in Mizunara (Japanese oak）casks. Balvenie Caribbean Cask was created by The Balvenie Malt Master, David Stewart, who celebrated an incredible 50th anniversary at the distillery in 2012. This single malt has had a 14-year maturation period in traditional oak whisky casks, before being transferred to casks that previously held Caribbean rum to finish aging.

The word heritage has various associations: inheritance, patrimony and a family secret kept under lock and key by the Caetano family. This germana cachaça is aged for eigth years in French Oak barrels and then for two more years in Balsam barrels to break the woody flavour and aroma an lighten the darker color result of the Frech Oak barrel aging.

Despite its long ageing, this minimum 30-month blend is not overtly sweet or oaky; it has a drier style, which is full of spice and character from its highland terroir. Cooked agave is present with a fine mixture of dried fruits, almonds and roasted coffee. There is a subtle and masked fudginess reminiscent of dark cocoa that emerges from the depth in its long and slightly dry finish.
