Our tropical take on a traditional sloe gin; swapping sloe berries for locally grown Far North Queensland Davidson Plums. The plums are steeped for up to 3 months to produce a truly unique sloe style gin. With an earthy aroma that is reminiscent of plum jam, stewed rhubarb and a touch of sweetness. Traditionally favoured by Indigenous societies for their medicinal benefits and protein content, native Green Ants are a unique bush tucker hand harvested in the Northern Territory by the Motlop family of the Larrakia people. The Green Ants display vibrant coriander and kaffir lime leaf flavours, with a citrus and lime burst on the palate further enhanced by Finger Lime. Native Juniper (Boobialla) is evident in the floral, perfumed aromatics, while spicy notes of Pepper Berry balance the citrus flavours. Strawberry Gum, Lemon Myrtle and Anise Myrtle provide green, leafy herbaceous characters which replicate traditional English Juniper resin characters.

Besides the Juniper, my aim with this Gin was to only use Tasmanian native botanicals. I discovered some very impressive native berries, leaves and seeds however they could only be wild harvested which meant I could not get enough quantity to make it practical enough for an ongoing production. I have still been able to use some Tasmanian native botanicals however I have now broadened the list to only Australian native botanicals (plus the Juniper). The use of 6 Native Australian botanicals with 3 of them never used before in any other Gin is found in this Gin.All of the botanicals are vapor infused which is a technique not used too often with Australian Gins. Vapor infusion (as opposed to steeped) will give the Gin a much more delicate and subtle bouquet. The Gin was designed to have a Beautiful smell. There will be delicate petal and citrus aromas with a hint of freshly cut hay.

“I really thought I had an original idea, alas, no. Saffron gin has been done before in France. I think the Brocken Specter Summer Gin is the first Australian saffron gin we use 100% Tasmanian grown saffron and never add any coloring. For the base we combine 16 aromatics including juniper, coriander seed, lemon myrtle, strawberry gum, star anise and vanilla bean. This mix is added to a grape based spirit and left over night. This spirit/aromatic base re-distilled, after at full strength we add the saffron. After a few days the saffron stamens are completely white and simply strained out. The gin is gluten free, vegan and unfiltered. Try a summer gin with good tonic, fresh chilies and thyme!”

To create this truly unique whisky, we selectively sourced rare malted rye and the finest malted barley from progressive malt houses, paired them with virgin American oak casks air-dried for 36 months and let it all mature in the maritime air of coastal Sydney. Our preference for malted rye over the far more commonly used unmalted rye affords this whisky a point of distinction evident upon the very first sip. This layered, aromatic spirit offers notes of spiced custard, ginger, stone fruit and baked apple pie with a fresh herbal finish that lingers on the palate.

Corowa Characters celebrates the people behind the whisky made at Corowa Distillery in Corowa NSW. A very approachable, single malt, wine cask whisky that exhibits floral characters with honeycomb sweetness on the nose. The palate indicates the combination of French and American Oak influences and the sweetness follows through with good spirit integration.
