Paying homage to the historical sailors, this Gin meets the test they required for “proof” that the spirit delivered was as promised by the British Royal Navy. Using the base of our Signature Gin the intensified strength provides an enhanced flavour experience where each botanical dances on the palate. A punchy hit of fragrant aromas from the citrus, and the subtle sweetness of premium vanilla. On the palate, the strong peppery pine taste of juniper combines with the citrus flavours and finishes with a super warmth from our spice combination. A Gin full of flavour that won’t disappoint.

The jewel in our crown is our award winning Shiraz Brandy single cask.The aroma is enticing and reminiscent of a fine European spirit. The flavour is fine yet complex. Hints of dark fruit combine with notes of vanilla bean, salted caramel and marzipan. These flavours meander with the Shiraz spiciness of cinnamon and nutmeg that culminate in a wonderfully long complex finish. The alcohol heat is silky smooth and warms the soul.

Besides the Juniper, my aim with this Gin was to only use Tasmanian native botanicals. I discovered some very impressive native berries, leaves and seeds however they could only be wild harvested which meant I could not get enough quantity to make it practical enough for an ongoing production. I have still been able to use some Tasmanian native botanicals however I have now broadened the list to only Australian native botanicals (plus the Juniper). The use of 6 Native Australian botanicals with 3 of them never used before in any other Gin is found in this Gin.All of the botanicals are vapor infused which is a technique not used too often with Australian Gins. Vapor infusion (as opposed to steeped) will give the Gin a much more delicate and subtle bouquet. The Gin was designed to have a Beautiful smell. There will be delicate petal and citrus aromas with a hint of freshly cut hay.

Traditionally favoured by Indigenous societies for their medicinal benefits and protein content, native Green Ants are a unique bush tucker hand harvested in the Northern Territory by the Motlop family of the Larrakia people. The Green Ants display vibrant coriander and kaffir lime leaf flavours, with a citrus and lime burst on the palate further enhanced by Finger Lime. Native Juniper (Boobialla) is evident in the floral, perfumed aromatics, while spicy notes of Pepper Berry balance the citrus flavours. Strawberry Gum, Lemon Myrtle and Anise Myrtle provide green, leafy herbaceous characters which replicate traditional English Juniper resin characters.
