It will also soften and build additional complexity in the shorter team. Serve lightly chilled to allow flavours to shine.

The Ethereal One celebrates wines with ethereal qualities - so delicious and graceful in style they seem not to be of this world. This blend from Fleurieu and Adelaide Hills with bright ruby red and violet hues is medium bodied, dominated by fruit aromas of cherries and red currants with savoury notes of baked quince and dried herbs.

Sourced from a number of old vineyards in the Riverland and McLaren Vale, some of which are dry grown bush vines. Aromatic and lifted on the nose with a beautifully layered, textural palate with wild strawberry and spice. Vinified in small batches, separately. Wild ferments, whole bunch inclusion, larger oak and no filtration or fining define the natural character of the wine.

Delightful spice with cassis, mocha and licquorice the wine is full bodied with a bold but round finish.
