To create this truly unique whisky, we selectively sourced rare malted rye and the finest malted barley from progressive malt houses, paired them with virgin American oak casks air-dried for 36 months and let it all mature in the maritime air of coastal Sydney. Our preference for malted rye over the far more commonly used unmalted rye affords this whisky a point of distinction evident upon the very first sip. This layered, aromatic spirit offers notes of spiced custard, ginger, stone fruit and baked apple pie with a fresh herbal finish that lingers on the palate.

Pot still is an equipment used to distill spirits. It is a slower process and had to be done in batches in a single distillery. Green Spot is an Irish whiskey that mixed pot still whiskeys aged between 7 and 10 years, in order to find the perfect balance on the smell and taste. It opens up with notes of orchard fruits, sweet spices and toasty oak. Full body and a lasting pleasant finish with flavours of warm spices and barley.

Compass Box Whisky's The Peat Monster combines smoky and peaty single malts from the island of Islay and the Isle of Mull with rich, medium-peated Speyside whisky. The result is, as you would except, a peaty and smoky delight with rich citrus notes of liquorice and spicy, sweet complexity. Head Distiller Graham Buller collected prime barrels of Scotch whisky and American Bourbon whiskey, with a dream of creating his perfect blend. The Scotch has an average of five years barrel maturation and the Bourbon two, while the final blend has gone back into bourbon barrels for finishing.
