Under the hustle and bustle of cobbled Dublin streets in the early 1900s, a rare whiskey was quietly making a name for itself. Rather than being simply a ‘finished’ whiskey, Yellow Spot is special in that it contains whiskey that has been matured for a full 12 year period in three oak cask types: American bourbon barrels, Spanish sherry butts, and uniquely, Spanish Malaga casks. The Malaga cask brings an exotic sweet note to the whiskey making it a truly delightful taste experience. Only extremely limited quantities of Yellow Spot have been bottled making it a whiskey to seek out and savour as a true rarity. While Green Spot is often described as tasting like green apples, Yellow Spot is more in character with juicy red apples. Sophisticated and complex in character, the inclusion of full term matured whiskey from ex Malaga casks contributes exotic characteristics to the whiskey. Aromas on mown hay & cracked black pepper. Red bell peppers, nutmeg, clove oil & green tea. Sweet honey & peaches from the Malaga casks. On the palate is a honey sweetness with pot still spices. Flavours of fresh coffee, creamy milk chocolate & Crème Brûlée. Notes of red apples & toasted oak. First blended in 1829 in the small Irish town of Tullamore in County Offaly, Tullamore DEW takes its name from one of the earliest influencers of the newly established distillery, Daniel E Williams (DEW). During barrel aging a drop of whiskey is lost to evaporation and is sacrificed to the heavens, often referred to as the "Angels Share." Redbreast 12 Year Old Irish Whiskey is the quintessential example of premium Irish Whiskey, and considered to be the purest form of the art. With a history dating back to 1903 when John Jameson & Company entered into an agreement with Gilbeys Wines & Spirits Import Company to supply new make whiskey which was then 'bonded' in old sherry and port casks. Single Pot Still whiskey is unique to Ireland and this exciting example is crafted from both malted and unmalted barley and then triple distilled in a traditional copper still. The full-bodied flavour of our signature whiskey comes from the unique marriage of single pot still spice and single malt smoothness. A triple distilled Irish whiskey which is complex yet smooth, this is ideal on its own or on the rocks, though a grilled rib eye steak with a side of mash and gravy, would suit it perfectly. Nose: Nectarine, honeydew melon, buttered brown bread. Palate: Custard cream biscuits dunked in tea, cinnamon sticks, peppercorn, and lemon cheesecake. Finish: More biscuit notes, with a touch of anise.

One of the most striking-looking new releases around, this bone-jangling, sepulchral, triple-distilled whiskey was once entombed in oloroso sherry butts. A nose of baked apple and sultana, rolled marzipan, sesame seeds, and roasted spices. Smooth tasting, with dark fleshy fruits, mixed peel, chocolate, walnut; the taut spicy middle section dies back to baked oranges. Finish includes dried fruit, lemon zest and oak spice delight the palate, before finishing with a woody and honeyed sweetness.

Bushmills Single Malt Whiskey 21 year old is aged for a minimum of 19 years in former Oloroso Sherry and Bourbon-seasoned casks, then transferred into Madeira casks for a further 2 years. The result is a whiskey awarded Best Irish Single Malt 2013. It has huge depth that interweaves dried fruit flavours with spicy, aromatic maltiness and subtle nutty raisins notes.
