The palate exudes fleshy primary fruits, layered with nutmeal, lemon butter and brioche. A chalky, mineral texture and fresh citrus acidity continues the bounce.

Since 1992, Madfish have been producing an exciting range of contemporary, cool climate wines inspired by the wild, coastal and pure characterises of Australia's South West. The wines are made by the dedicated team led by chief winemaker Janice McDonald. The chardonnay displays bright notes of citrus blossom, peach fuzz and melon that merge beautifully with rich nuances of crème caramel, lemon curd and vanilla pod. A scattering of nutmeg and preserved pear furthers the texture and flavour on the palate.

It has a lovely bouquet of white peach and pear with hints of honey and nougat. This chardonnay is 100% wild fermented and matured in French oak for nine months. The palate is soft with fresh tropical fruit flavours, finishing with citrus and chalky minerality. All three parcels were hand-picked on the same day and chilled overnight. The following day the grapes were tipped as whole bunches directly into our press and gently pressed off into a tank. Natural settling occurred overnight and the cloudy juice was then sent to French oak barrels twenty-four hours later. Wild fermentation was completed in a barrel and allowed to mature on its own lees for nine months, with minimal stirring during this time, to maintain freshness and natural acidity. Margaret River is a world renowned Chardonnay producing region and Pierro can rightfully stake a claim as to why. Incredibly complex, it is a tangle of fine-boned acid, lees complexity, pristine fruit and the most detailed use of good quality oak. Extremely enjoyable now, but will benefit from short to medium term cellaring.

Woodlands Chardonnay has an attractive nose of grapefruit enhanced by some oak characters. A wine of some finesse with the elements of fruit, oak and acid coming together to produce a wine of exceptional balance and length.

Once & Well is an elegant example of Chardonnay from the cool climate of Margaret River. Once & Well sets a high benchmark for this wine style. Ripe stone fruit and spring florals with hints of spice and oak on the nose, this wine has a mouth watering acidity structure that complement the richer mouthfill of the wine beautifully.
