The Kevin John Chardonnay is Cullens flagship white from their biodynamic vineyards. A refined and elegant style brimming with white peach and citrus, showing bakery nutty complexity and deft oak integration. The wine is named in honour of Vanya Cullens father, the late Kevin John Cullen. Grapes are harvested on a flower or fruit day and whole-bunch pressed to obtain the highest quality juice. It is then barrel fermented with native yeasts in French oak barriques and matured for approximately 7 months in one- third new and two-thirds seasoned oak barrels.

The wines of Fraser Gallop Estate are intensely flavoured, textured and complex. Only the finest quality French oak barrels are used for all Fraser Gallop Estate wines, with very specific Bordelais coopers used for the Cabernet Sauvignon and Semillon Sauvignon Blanc blends, and Burgundian coopers for the Chardonnay. The complete winemaking process takes place at the estate - picking to vinification to barrel maturation to bottling to cellaring. Fraser Gallop Estate is an estate grown, produced and bottled wine. Flavours of lemon curd and grapefruit with searing length. A wine with clarity and finesse. A tightly focussed and very precise wine showing seamless fruit purity with the lightly toasted French oak very much in the background. Once & Wells Chardonnay comes from grapes grown in both the warmer and cooler areas of the Margaret River region, mixing tropical and citrus characteristics to produce a distinctive and well-balanced wine. The Chardonnays nose is vibrant, rich and enticing with tropical fruits such as lychee and pineapple, citrus, some spice, nougat and hints of jasmine. The palate is light and refreshing with a mealy mid-palate and elegant finish. A touch of vanilla and spicy oak gives this Chardonnay a refined note.

2020 A mild 2020 spring with reasonable rainfall provided excellent growing conditions. A wet November followed by a warm and dry December and January set the vines for up for a regular season.However wet and humid conditions in February created an unusual vintage with extreme weather. As a result, the 2021 vintage required extra work and attention to detail in the vineyard. The final wines show incredible flavour at lower Baume’s with bright natural acidity. Great fruit purity and varietal expression.
