Fashioned in the style of a London Dry, this contemporary expression contains fresh limes, mint as well as pink pepper, ginger, mace, cassia, and cardamom. Traditional vapour distilling maximises controlled quality of this award winning Australian spirit. Served as a G&T garnished with strawberries and lemon thyme.

Willa, the owner of the farm owns 12000 fig trees. 25 years chemical free, Estate grown Figs poached gently to extract the sweet fig aroma, essence, and earthiness. The gin botanicals and spirit show early on the nose with all the fig showing on the palate. Pour over ice and enjoy or add some lime for a flavor explosion, a perfect balance of sweetness and acidity which stretches the profile, then add a little good tonic to create the perfect G&T.

We approached the Distillers’ Release gin series with an idea to push boundaries; experimenting with flavours and seasonal ingredients to create profiles that ignite the imagination. We use a blend of the base liquor and Mount Lofty spring water, gently infusing it with a unique range of seasonal botanicals foraged locally and from around the globe. Our barrel aged Gin has been aged in an American oak ex apera barrel (Australia's answer to sherry). It is lusciously sweet and complex. A limited edition gin never able to be repeated.

Big, dry and peppery. Big Dry has notes of rosemary thyme, kaffir lime and sage, but what sets this gin apart is the jalapeno we use to give it that extra kick. The intenseand robust flavours complement the dry taste of the juniper berries. This style lends itself to a martini or as a G&T with a slice of jalapeno and coffee beans.

Twelve botanicals, some from our own distillery garden, make up this punchy gin. Rhubarb, bay leaf, apple and cloves give a savoury zing on the palette. This style pairs well with just about anything green and leafy, our suggestion is some fresh basil and a quality, floral tonic water. Great for cocktailmaking & mixing.
Ambleside Distillers No 8 Botanical Gin
No. 8 showcases the zesty citrus flavour of South Australias very own organic Riverland oranges. This botanical gin is soft and smooth on the palette. The citrus notes are complemented by the distinct flavour of star anise and coriander seed. Enjoy with a quality, floral tonic water and a slice or two of dehydrated organic orange.
Tamborine Mountain Distillery Lilly Pilly Gin
Crystal clear with a pale pink blush. Sweet and perfumed - sort of in the Old Tom style. Pleasing scents of candied citrus peel combine with hints of anise, ginger, coriander, juniper and pine sap. A creamy entry leads into a semi-sweet mid palate featuring citrus peel, hints of juniper and pepper. Concludes drier with a juniper and pepper aftertaste followed by a brisk grapefruit like fade. It can be served as an aperitif served with Tonic water or added to specific cocktails.
