The West Winds Gin story began back in 2009 when two mates (James Clarke and Paul 'The Doctor' White) hatched a plan to create unique styles of Australian gin using local and imported botanicals that would be cut with triple filtered Margaret River rain water. Within a month of launching, The West Winds had already made a strong impression on the gin world, winning numerous accolades at the 2011 San Francisco International Spirit Awards. 'The Sabre' - a Gold medal winner from said awards - presents a traditional British style gin led by underlying citrus and a dominance of juniper, followed by the classic coriander seed. The addition of wattle seed adds a depth to the mid palate and introduces a creamy texture without the need for artificial additions. Best served with lemon and tonic or fresh watermelon juice.

Produced in small batches utilising grape spirit, the 78 Degrees Gin is vapour distilled using our unique column and basket distillation method, to retain delicate flavours and aromas.

Distilled in small batches in a custom built 230L Müller copper still, fresh ruby grapefruit, native aniseed myrtle, cubeb pepper and tonka beans are used to create this Gin. Poor Toms Fool's Cut at 52% is for audacious gin drinkers looking for a spirit with strong Juniper presence. In looking to create a gin with enough presence to shine in strong cocktails, the more delicate, floral botanicals have been left out. So it's adios strawberry gum leaf, granny smith apples, lemon myrtle and dried chamomile, and hello loads of juniper and the earthy depth of liquorice root.

Adelaide Hills Distillerys Sunset Gin is inspired by those closing moments in the day that throw panoramic views across the sky. This vision slowly morphs and changes, continually captivating the viewer. Fresh red berries with subtle hints of pine and eucalyptus, further botanical integration adds depth and complexity to give the finish great balance and intensity. Mix with Mediterranean Tonic and garnish with Strawberries & thyme for best serving experience.

Tradition coupled with contemporary flair, Vickers Pink Gin carries aromas of ripe strawberries, raspberries and blackcurrants, finishing with a familiar hint of juniper. Tasting of berries, with undertones of traditional Gin, the blend delivers a unique flavour and smooth finish. Best enjoyed as one-part Gin, three-parts tonic. Distilled in Melbourne. Brogans Royal Blood Gin is the savoury sensation that is her navy strength gin. Something a bit special, complex with a lingering cardamom heat, at 57.2% it has a bit of a kick. Herbal aromas and flavours from the rosemary and bay leaf are seasoned with Australian sea parsley, saltbush and roasted wattle seed giving plenty of good mouthfeel. Tasting Note Juniper forward, dry, slightly citrus, and extremely savoury. With herbal and aromatic characters of fresh vapour distilled rosemary leaf, supported by bay leaf, olive leaf and black peppercorns, that are amplified by the Australian natives of spicy mountain pepper leaf, fragrant and savoury salt bush and salty sea parsley. A bold amount of roasted native wattle seeds lengthens the finish and exaggerates the heat of green cardamom. A winner in a dry Martini and a Dirty G&T with a slice of apple to garnish.

Our figs are poached gently to extract the sweet fig aroma, essence, and earthiness. The gin botanicals and spirit show early on the nose with all the fig showing on the palate.

Impression Bay Distillery is located on the beautiful Tasman Peninsula, Tasmania. Our First Impression Gin is made in the London Dry style and incorporates not only traditional botanicals including juniper, cardamom, coriander, cassia bark and lemon myrtle but also our three, fresh, locally grown aromatic botanicals, Mountain Pepper berry, Saltbush and Kunzea. These botanicals are vapour infused in the last stages of distillation in our German still, preserving their subtle aromas and flavours. First Impression Gin is smooth, well balanced and unlike some other gins, crafted to be enjoyed neat or on the rocks. 42%ABV.
