The Bin 389 style evolved as a result of experiments, by Max Schubert, in the 1950s to develop a highly individual wine using a blend of Cabernet Sauvignon and Shiraz with compatible oak treatment. Pocketwatch Pinot Noir was produced using grapes grown in Mornington Peninsula and Yarra Valley. It is a delicate red wine exhibiting subtle hints of oak from its nose. Displaying bright fruit characteristics, the palate is filled with red fruit flavours of cherry and raspberry combined with a slight earthy appeal and nuances of oak. An easy-to-drink wine, it can be paired with roasted chicken, pasta, grilled salmon and duck.
