Blood Oranges are a prized variety in Sicily – and harvested in November – their rich red colour develops from the cool Mediterranean nights. The Blood Orange peels are steeped in alcohol and pressed in a basket press. The infusion is then blended with juniper and other botanicals before being distilled in a stainless steel vacuum still.

Ink Gin gets its unique colour from the deep natural infusion of petals from an exotic blue flower. Its even more remarkable, when mixed with tonic and it turns from its lustrous blue to a remarkable blush pink. A premium dry gin made with 13 organic botanicals, including a mix of traditional and Australian natives. Like all true gins, juniper berries are the largest botanical component, however the defining character of Ink Gin comes from the second tier botanicals led by locally grown lemon myrtle leaf, coriander seed, Tasmanian pepper berry and freshly peeled sundried sweet orange peel. These major ingredients give Ink Gin its fresh piney, spicy and citrusy aroma and flavour. The third group of minor botanicals include elderflower, cinnamon, cardamom, angelica root, oris root, licorice root and lemon peel. Roku is Japanese for "Six" which refers to the six Japanese botanicals used. Cherry blossoms, cherry leaves, green tea (sencha), refined green tea (gyokuro), sansh pepper, and yuzu are utilized along with eight other traditional gin botanicals. Smooth and oily, the gin has a rich character as it coats the tongue. Theres a fleeting glimpse of cherry blossom and traditional notes before the tea and tannic notes take over.

Four Pillars Gin worked with the QANTAS Rockpool mixology team to create the second release in their Bartender Series - an Asian-inspired Modern Australian gin with softness and spice, one that is truly a spirit of Australia.
