Billy Goats, our Queensland Gin is a small batch, handcrafted using a unique selection of Old and New World Botanicals. We have combined Australian Wheat spirit with gently soaked Juniper, the freshness of Ruby Red Grapefruit, Lemon Myrtle and Native Australian Finger Limes for a vibrant citrus burst. We were looking for a very approachable Gin that had enough citrus for a refreshing burst, but also with enough subtle botanicals to give complexity and depth. Enjoy straight up, with tonic, with soda, or in a cocktail.

Distilled to a unique recipe, Colombo 7 Gin consists of seven spices and botanicals, each with a unique role. Together they create a complex aroma and distinctive taste. Imbue distillerys inaugural gin - a smooth wheat-based spirit starring locally abundant, foraged botanicals from Melbournes fringe suburbs. Suburban is boldly spicy, with the unmistakable pine aroma of juniper and the nutty warmth of coriander. Sunflower seed oils carry the grassy fennel and ginger heat through a burst of lemon to a crisp finish. Garnish with cucumber in a g&t to enhance the prickly pears unique melon notes.

Australian native botanicals of strawberry gum, lilli pilli and river-mint give a gentle, sweet, berry like element and deliciously refreshing.
