Punt e Mes is an Italian vermouth, dark brown in color and has a bitter flavour. Punt e Mes literally means "point and a half" in Piedmontese, referring to the flavor being characterised as one point of sweetness and half a point of bitterness. It can be used as a substitute for regular rosso vermouth in drinks such as the Manhattan. Punt e Mes has a strong, distinctive flavour, half-way between regular rosso vermouth and Campari.

Pernod Ricard Byrrh Aperitif

A wine-based aperitif, Byrrh has the specific characteristic of being flavoured with quinine. Its alcohol content is 18°. The basic grapes, mainly the Carignan and Grenache varieties from the hillsides of Roussillon, are transformed into mistelles (partly fermented grape juice), which are then blended with selected dry red Roussillon wines. Byrrh is drunk as an aperitif. It is best served cool, at approximately 16°, and goes well with a twist of lemon zest or a little Crème de Cassis.

Sip Sepia over ice, in a light beer as is the tradition method in France, or in cocktails.

Pommeau is produced by blending an 18th month old Apple Brandy and apple must.In the Huon Valley, Charles Oates is using a proper Charentais alembic still, the design used in Normandy (France) to produce Calvados Pays d'Auge. The Charentais alembic still was designed in the early 16th century in the Cognac region of France where it is still used for fine Cognac production. They produce an aged apple brandy from their still, in the same style as Calvados. They also produce a lighter apple spirit, Charles Oates Apple Blanco, a delicately flavoured spirit.
