Family owned Distillery located in Spring Bay Tasmania. Botanicals: 11 including 3 local botanicals (Native Bush Pepper, Lemon Myrtle, Tasmanian Wattleseed). Botanicals are steeped for 24 to 48 hours then additional Juniper and Liquorice Root are vapour infused in the neck of our copper pot still to give a traditional Juniper flavour at the front of the palate through to a sweet liquorice finish. This gin is triple distilled giving the spirit an ultra-smooth flavour despite the higher than normal ABV. Nose: Immediate sweet floral notes of juniper, liquorice and spice. Palate: From a bright and sweet juniper opening, the flavours build across the palate to include perfumed floral notes, bright citrus and a crescendo culminating in a big, warm and comforting glow of star anise and liquorice root. Finish: A round smooth mouthfeel from this oily spirit gives way to a fine clean finish of liquorice and spice.

Bone Dry Gin features juniper that has been distilled three different ways using our copper pot-column hybrid vacuum stills - the only example of their kind in the world. These world-class stills eliminate the damaging impact of heat on delicate botanicals, leaving us free to explore the many attributes of this multifaceted ingredient. To draw out a multitude of diverse flavours from our Macedonian juniper, this hand foraged ingredient was both cold and hot distilled to create three distinct expressions. Joined by a supporting cast of single estate Australian coriander seed, Tahitian lime and lemon scented gum, the resulting spirit offers a supple start on the palate that makes way for a bold balance of citrus and herbaceous intensity that dovetails to a profoundly pine-laden dry finish.Bone Dry Gin rigorously balances a huge amount of raw power with nuance, poise and complexity to reveal an elaborate juniper experience that makes a great G&T and an even better Martini. Four Pillars Spiced Negroni Gin is an aromatic, rich and spicy gin with great power and intensity. First, they take the base botanicals and upped the amount of Tasmanian pepperberry leaf and cinnamon. Then the addition of an exotic West African spice called Grains of Paradise. Although powerful, the spice tends to glow rather than become hot. Beautiful organic blood oranges are one of the last additions to the botanical basket, as well as some ginger. These wonderfully fragrant fresh botanicals help lift the spice to another level.

Distilled in Melbourne by Brogan herself, Evening Light Gin is her fresh and fruity, easy drinking gin. Gentle and zesty, she like to think of it as new age Australian gin. Unique botanicals such as fresh mangos, fresh raspberries and organic white grapefruit juice form a fruity and unconventional backbone, complimented with sweet piney juniper and warm cassia. refreshing strawberry gum and river mint shine through. Tasting Note: Lighter and more delicate in flavour, not alcoholic strength. With a gentle piney juniper and dry coriander seed base lifted up by fresh Australian mangos, raspberries, and white grapefruit juice to create a lively character. Highlighted by the delicate floral flavours of red rose petals and lavender, and warmed by cassia bark. Australian native botanicals of strawberry gum, lilli pilli and river-mint give a gentle, sweet, berry like element and deliciously refreshing.
