Daosa Natural Reserve Non-Vintage (6 )
Planted by Charles “Chilly” Hargrave in 1987, the Summertown Vineyard (Piccadilly Valley) is one of the oldest vineyards in the Adelaide Hills. It is planted with Chardonnay and Pinot Noir and the fruit has always been used for sparkling wine – and some years for top end table Chardonnay. The Bizot vineyard is situated in the heart of Piccadilly Valley, and is one of the highest vineyards in the valley at 500m altitude. The soil is red clay and sandy loams over a 70 million-year-old shale rock formation. The Chardonnay is planted on a north-north east facing slope. The terroir in the higher, cooler slopes of the Piccadilly Valley makes it ideal for Sparkling wine produced using Méthode Traditionnelle. DAOSA is made following the Méthode Traditionnelle used in the Champagne region of France. Perfectly ripe Pinot Noir fruit for sparkling was hand harvested in March 2022. The fruit was whole bunch pressed, retaining only 600L per tonne of fruit pressed. This gave very fresh acidity, clean juice and good primary fruit characters prior to fermentation. The juice was fermented cool in stainless-steel tank. Once primary fermentation was complete, the wine went through malolactic fermentation in tank. Before tirage, the wine was blended (assemblage) with some Réserve Pinot Noir and Pinot Meunier (15% Réserve wines in the final blend) and aged in large old foudres without sulphur. The wine was then "tiraged" with the addition of yeast and sugar prior to bottling, to induce secondary fermentation in bottle. The resultant sparkling wine was aged on lees before disgorging. The wine shows classic Pinot Noir characters with subtle strawberry notes on the middle palate, tempered by a fine bead and a beautiful complexity and length from the Réserve wines. A classic example of Australian sparkling wine, made in the traditional method.

At just 29 years of age, Charles-Camille Heidsieck decided to create his eponymous House in 1851. Despite being an heir – the Heidsiecks were one of the most respected families in the champagne world – he decided to forge his own path and establish his own dynasty, eager to embark on his own entrepreneurial journey. It is with the Brut Réserve that the House expresses the quintessence of its style. Particularly recognizable by its generosity, precision and depth, this multi-vintage wine offers a complex and greedy nose and an unctuous palate, a guarantee of quality that experts and wine critics from all over the world distinguish with their eyes closed. Of the sixty Champagne crus chosen to produce this emblematic cuvée, three are pillars of the Brut Réserve style. Oger - Grand Cru Chardonnay from the Côte des Blancs, gives it its fleshy and generous notes. Ambonnay - Grand Cru Pinot Noir from the Montagne de Reims, is synonymous with power, structure and fruity notes. Verneuil - Meunier from the Vallée de la Marne, ensures its balance and smooth texture. This champagned is a blend of 40% Pinot Noir, 40% Chardonnay and 20% Meunier.

Louis Roederer Brut Vintage
This new vintage is fresh and crisp, taut and racy. A fine youthful wine that promises to age gracefully for five to six years. 70% Pinot noir - 30% Chardonnay. One third of the wine is matured in oak casks prior to bottling, after four years on lees, it is disgorged, it sees dosage of 8-10 g/l before another 6 months in bottle prior to release.

Family run since the 19th century, the Billecart Champagne house delivers large number of bottles which are always well made and of the highest quality. Champagne Billecart-Salmon was founded with the marriage of Nicolas-François Billecart and Elisabeth Salmon in 1818. Situated in the village of Mareuil-sur-Aÿ, near Epernay. Champagne Billecart-Salmon is still a family-run organisation with seventh generation Mathieu Roland-Billecart overseeing business. In 2016 Chef de Cave François Domi retired after 30 years with Billecart and handed over to his deputy Florent Nys who started with the business in 2005. The vineyards are overseen by Denis Blée and all of the team are members of the eight strong "tasting committee" along with 6th generation François Roland-Billecart and Antoine Roland-Billecart and fifth generation Jean Roland-Billecart. By 2020 production had expanded with grapes now coming from 300 hectares and 40 crus mostly within 20 kms of the winery. This unique release celebrates 200 years of Billecart-Salmon independence and family savoir-faire since 1818. Bicentenary Cuvée 200 is a multi-vintage blend of four exceptional harvests: 2000, 2003, 2008 and 2012. In tribute to the foundation year, just 1,818 magnums and 18 Jeroboams were produced. The blend constitutes wine heralded from eight Grand Crus in the Montagne de Reims and Côte des Blancs, 50% of which were vinified in oak barrel. The champagne is Pinot Noir dominant in order to reflect the ‘old rose’ fragrance that is typical of Billecart-Salmon's famous Clos St-Hilaire, as well as the founders’ cuvées Nicolas François and Elisabeth Salmon. Appearance: Pale gold colour intensity, draped with a bright luminosity with golden yellow tinges. A persistent and abundant finesse of bubbles evolving in a disciplined and energetic way Aroma: A noble and racy expression of a chiselled complexity towards floral notes, orchard fruits and slightly roasted dried fruits (carnation, Williams pear and just roasted hazelnuts). A natural and vibrant sparkle evolving towards scents of citrus zest (lemon caviar and kalamansi) Palate: An ample and dense tension where the texture slowly reveals itself under a controlled and exhilarating acidity.
