The production takes place in Fuefuki, a region rich in natural resources and surrounded by mountains: two national parks to the north and west, and the spectacular Mount Fuji to the south. Concentrated spring waters emerge in this valley after passing the subsoil with porous washing stones. A gin capable of transmitting the Zen spirit of Japan, bringing the human being into serenity and harmony with nature.

Hibiki 17 Year Old Whisky is produced with a combination of grain whisky and premium malts from the Yamazaki and Hakushu distilleries, which are often aged in very rare Japanese oak. This whisky is elegant and poised, slowly revealing a clear yet complex equilibrium. Mars Iwai Tradition Japanese Whisky is soft and rounded, yet full bodied and mellow. The nose gives sweet honey, leading to a complex, peaty full bodied palate which gives sweet peat, orange marmalade, maple, burnt sugar cane, cedar and cigar.

From Suntory's mountain forest distillery, Hakushu Whisky is the fresh and gently smoky single malt whisky with herbal notes that is the revelation of Japanese single malts. Hakushu 18 Year Old has a fresh deep aroma from long maturation resulting in a milk caramel and honey-like flavour on the palate and ripened fruit finish.

One of only two whiskies available from the Mars range, the Mars Iwai Bourbon Barrel Japanese Whisky displays beautiful amber gold hues, with hints of rose. Light, floral and sweet on the nose, deepened by cherries, roasted coconut and dark cacao. Extra sweetness experienced with notes of honey suckle and marshmellows. Palate is soft, gingerbread, raspberry and spiced honey make for a delicious first sip. Underlying flavours of dried fig and allspice give it that extra kick. Wonderful finish of spiced port and ginger.

From Suntory's mountain distillery, found deep within the forests of Mount Kaikomagatake, Hakushu is a single malt that takes liquid and from the pure waters of the Southern Japanese Alps. This gives it a terrific fresh flavour, many considering it as a uniquely liberating malt whisky. The 25 year old is deep amber in colour and a winner of numerous prestigious awards. Super rare and hard to find, only a few opportunities exist in Australia to add this to any whisky lovers collection.
