Production: This rum is first aged for 5 years in American oak casks at its place of origin in the Caribbean (Guyana and Barbados). Then it is shipped to Williams & Humbert’s installations in Jerez (Spain), where the rum is aged for another 3 years in casks that have previously held the internationally renowned Dos Cortados palo cortado sherry (aged for 20 years, as certified by the Jerez-Xérès-Sherry Regulatory Council). Tasting notes: This two-stage process produces old rum of unique characteristics, with a matchless bouquet and flavour. It is exceptionally smooth. Suggestions for consumption: Excellent in a balloon glass either neat or on ice. Superb in elegant mixed drinks and cocktails.

Arcane Turquise Bay Amber Rum

The paradise on Earth some call Mauritius is home to six Rum makers and is one of the few realms that still offers the entire array of styles: traditional, agricole, light, dark, spiced, et cetera. With Turquoise Bay Amber Rum, the creators have distilled the essence of the terroir: sweetness and spiciness in a wonderful tropical dance that evokes images of palms, sand and sunsets. It’s a unique and unusual expression starting off as a traditional Rum, made from molasses. But that’s where its traditionality ends. The Spirit is joined by a dash of Rhum Agricole that comes from freshly squeezed sugar cane juice, the Caribbean way. The invigorated amber blend is then finished in ex-Cognac barrels, adding sophistication and subtlety. An extremely sumptuous expression from Isle of Moris, perfect for summer afternoons, evenings and nights. This rum has a lovely harmony between sweetness and spiciness with notes of toffee, raisins, honey and caramel.

Plantation Isle of Fiji Rum

From the pristine lagoons to the lush jungles, Plantation Isle of Fiji is an ode to the beauty of the Fiji Islands. Molasses-based and made using both pot and column stills at the Fiji Distillery, including local Fijian sugar cane, the liquid was first aged in the tropical climate in bourbon casks for three years, then sailed to the southwest of France for twelve months finishing in French oak. This double ageing method paired with Fijian know-how creates a rum with warm notes of exotic fruits and raisins. 40% Alc./Vol. Notes from the producers... Color : Gold. Nose : Intense, it starts on molasses, pear and varnish. It then becomes fruitier and spicier on apple, banana and gooseberry, also nutmeg and vanilla with a hint of smoke. Palate : Rich and round, it follows the nose with vanilla fudge, honey, ginger and fruity notes of prune and coconut. Finish : Very long on dried banana, bourbon and allspice. Empty glass : Molasses, oak and allspice.
