Taking inspiration from those great Tennessee Whiskeys and Kentucky Bourbons comes Australias first version of a sour mash whiskey. Using a classic grain bill of corn, rye and malted barley, sourced entirely from Western Australia, our full flavoured sour mash is bursting with tones of vanilla, caramel and hazelnuts. This mixed grain whiskey is richly textured with elegant spices and fruit with a smooth creamy finish. Each barrel is hand bottled and numbered in keeping with our small batch tradition.

A new release from The Macallan and one we were thrilled to learn of. Matured in a combination of American and European Sherry oak almost 50:50, though slightly weighted towards American oak ex-Sherry casks. New oak is shipped from America across to Spain, where expert Coopers craft casks. These casks are then sherry seasoned before traveling to the Speyside distillery to mature for twelve years. These whiskies are then united with counterparts aged in sherry seasoned European oak casks. The result is, as you might expect nothing short of seamless. On the palate youll find some spice along with some green fruits though the meat of the palate remains true to style, featuring fat caramelised sultanas, vanilla and wood spice. Made using a tradition family recipe and Queensland barley aged for 7 years in ex redwine reconditioned French Oak barriques with American oak heads. One by one, The Last Great Malts of Scotland will leave their distillery gates. Deemed the bad boy of Speyside, Craigellachie is an unapologetically unique and challenging Single Malt. This is a complex dram, packed with flavour and texture. 13 Years Old, from an 1891 distillery. Bottled at a punchy 46% ABV. A stubborn, sulphurous single malt, condensed in rusted worm tubs on an inhospitable rocky bluff.

To create its well rounded flavour, Glenmorangie 18-Year-Old Extremely Rare Malt spends fifteen years maturing in American white oak casks, then approximately 30% is transferred into Spanish Oloroso casks for a further three years. Then both elements are blended back together to create a whisky with a rich bouquet and full, rounded flavour.

Distilled in the old columns of the Factory of Simon-located just in front of The Rum Company-small columns and entirely made of copper, this rum old Martinican was developed in exceptional conditions. The peculiarity of this columns lies in the exhaling of intense perfumes that give the rum a particularly expressive and round profile. This lot was chosen with care by the Maître de Chai and the oenologist of the House, Robert Peronet and Gaëlle Hardy. It is an assembly composed of rums aged between 3 and 10 years in red barrels of Bourbon. It is the gourmet and exotic notes of vanilla, coconut and chocolate that rub shoulders with those of dates and subtle tobacco, which seduced the experts Clément.
