Devil's Lair The Hidden Cave collection was created to showcase the daring and innovative approach to Margaret River winemaking. Oliver Crawford hits the mark beautifully with this Chardonnay that is bursting with Granny Smith apple aromas. In the mouth the wine is a cascading behemoth of white peach and rich nougat.

Xanadu Fusion Chardonnay gives an elegant bouquet full of pears, grapefruit and gala apples with underlying hints of nougat and cashew. The palate is medium bodied displaying white fleshed stone fruits and zesty citrus flavours. The wine offers an almost crystalline minerality, complimented by a lovely creamy/marshmallow texture derived from lees stirring whilst in barrel. Taut and fresh, the bright fruit and crisp acidity combine to focus the wine perfectly to a lingering fruit finish.

Vasse Felix is on the cutting edge of modern style Chardonnay with their focus on lean, zippy and aromatic characters. A proven medal and trophy winning wine, the Vasse Felix Filius Chardonnay has delicious stone fruit and purity of acid and minerality. Has wonderful line and length that will accompany light seafood dishes wonderfully.

The wines of Fraser Gallop Estate are intensely flavoured, textured and complex. Only the finest quality French oak barrels are used for all Fraser Gallop Estate wines, with very specific Bordelais coopers used for the Cabernet Sauvignon and Semillon Sauvignon Blanc blends, and Burgundian coopers for the Chardonnay. The complete winemaking process takes place at the estate - picking to vinification to barrel maturation to bottling to cellaring. Fraser Gallop Estate is an estate grown, produced and bottled wine. Flavours of lemon curd and grapefruit with searing length. A wine with clarity and finesse. A tightly focussed and very precise wine showing seamless fruit purity with the lightly toasted French oak very much in the background. Fermented 80% in stainless steel tanks and the rest in French oak barriques, Vinaceous Shakre Chardonnay has been designed to display the strengths of modern Margaret River Chardonnay. This wine of merit features a pale lemon colour and opens with bright and clean fruit aromas accompanied by subtle oak nuances. Juicy and structured on the palate, the wine offers a crisp and clean finish that lingers on. It's a casual, uncomplicated accompaniment to a variety of meals, especially mushrooms.

Paul Byron and Ralph Harold Dunning source the very best parcels of fruit from WAs most dedicated growers in to craft delicious wines like this Chardonnay. In the glass: Pale lemon.On the nose: Nectarine, apple and lemon with vanillin oak. On the palate: Fine, elegant and nicely balanced with a bright mix of fruit, zesty acidity, creamy texture and savoury cedar oak.

It has a lovely bouquet of white peach and pear with hints of honey and nougat. This chardonnay is 100% wild fermented and matured in French oak for nine months. The palate is soft with fresh tropical fruit flavours, finishing with citrus and chalky minerality. All three parcels were hand-picked on the same day and chilled overnight. The following day the grapes were tipped as whole bunches directly into our press and gently pressed off into a tank. Natural settling occurred overnight and the cloudy juice was then sent to French oak barrels twenty-four hours later. Wild fermentation was completed in a barrel and allowed to mature on its own lees for nine months, with minimal stirring during this time, to maintain freshness and natural acidity.
