The Scarborough Offshoot Verdelho starts with aromas of green tea with hints of tropical fruit, pink lady apples and honeysuckle. The palate shows botanical characters of sage, orange blossom, citrus rind, mint and lemon pith.

This Semillon from a sustainably farmed vineyard in the Hunter Valley region was hand picked from 40 year old Semillon vines. The grapes were then fermented with skins, pressed, and barrel aged for 3 months in old Chardonnay French oak. There was no additions, fining or filtration of the wine when bottled. The result is a textural, juicy wine with a zesty dry finish, with flavours of mandarin marmalade and a hint of lemon.

The Fish Cage Semillon Sauvignon Blanc is from the bank of the Hunter River. A blend of two classic varietals; where the Semillon brings aroma of lemon curd, lime leaf and a textured lanolin palate; the Sauvignon Blanc adds exotic tropical fruit with juicy acidity. Fruit picked in the cool of night, then quickly pressed to stainless steel. It remains on lees to gain some texture, but then bottled quickly, to retain the citrus, floral notes and the brisk acidity.
