This irresistible luscious dessert wine has concentrated flavours of honey / marmalade, dried apricots and peaches. Its silky mouth feel, light palate and fresh citrus finish make it a favourite for sweet wine lovers.

Floral fruit in youth, moving towards biscuity characters with age. A generally softer bodied palate with smoother acids than the Vat 1 and Belford Semillons.

Bouquet of citrus and lime, hint of baked bread. Elegant, tangy fruit, richness. Clean and crisp.

Vintage 2021 Region Hunter/Hilltops, NSW. This year's wine is inspired by the classic Alsatian white wines of France, wines that are fruit driven and often a sweet touch. A blend of Semillon, Riesling and Arneis produces a foral driven nose, middle palate sweetness with a crisp citrus finish. A perfect match for cheese and fresh seafood. Drink well chilled.

This Semillon from a sustainably farmed vineyard in the Hunter Valley region was hand picked from 40 year old Semillon vines. The grapes were then fermented with skins, pressed, and barrel aged for 3 months in old Chardonnay French oak. There was no additions, fining or filtration of the wine when bottled. The result is a textural, juicy wine with a zesty dry finish, with flavours of mandarin marmalade and a hint of lemon.

The Fish Cage Semillon Sauvignon Blanc is from the bank of the Hunter River. A blend of two classic varietals; where the Semillon brings aroma of lemon curd, lime leaf and a textured lanolin palate; the Sauvignon Blanc adds exotic tropical fruit with juicy acidity. The classic and seamless blend has profusion of flavour and a refreshing crisp finish. Fish Cage wines are vibrant, fun and and easy escape. We are often asked, "Why is there a fish in the cage?" Winemaker's Selection Vat 1 Semillon only ever comes from the oldest and best blocks. The vines are all dry grown on their own roots, and date back to 1923.
