Birthday Wine Cylinder “Hip Hip Hooray It’s Your Birthday”. This wines comes from an award-winning vineyard in the renowned wine region of Bendigo. Hand picked in night time (Calalenta). Immediately after harvesting, pressing and cooling are carried out in a few seconds down to -1 Degree C in an inert atmosphere. The free run must id fermented at 10 Degrees C in stainless steel tank for 20 days. After a light and quick aging on lees of 30 days in stainless steel the wine is gently fined, filtered and straightforward bottled. COLOUR : This “Provence Style” rose has a very pale pink blush colour. BOUQUET : Fresh and flinty aromas of strawberry, fresh cut watermelon and rose petals on the nose with mineral notes on the palate. FLAVOUR : The wine has a refreshing acidity that’s in harmony with the fruit and well rounded with good length. Its long and intense finish is the signature of a Rose with incomparable elegance. RECOMMENDED WITH : Excellent as an aperitif, matches very well also with raw fish, delicate vegetarian dishes, fresh cheeses and Japanese cuisine. SERVING TEMPERATURE : 10 – 12 degrees C.

Mechanical harvest at the end of september / beginning of october. Cold maceration prior to the fermentation according the quality of the grape. Slow alcoholic fermentation with temperature regulation. Pumping over 2 to 3 times a day then delestage. Smooth maceration during 3 weeks at 22 Celsius degrees. Ageing in cement vats with wooden dominos.

One of the Yarra Valley's up and comers, the Punt Road Shiraz is almost black in colour with aromas of cassis and a whiff of licquorice. Petaluma Merlot is medium body with a brick red colour, the superbly perfumed bouquet is a tangle of marzipan, spice, plum and confectionery and is the best nose of the early Petalumas. On the palate, flavours of cherry, plum and spice emerge, with very good depth and complexity.

Woodlands Cabernet Merlot is one of the regions best examples. The Watson brothers are the custodians of a family heritage in Margaret River that continues to this day. The Cabernet Merlot has attractive and complex aromas of dark berry and plum supported by well integrated vanillin oak. The palate shows similar characters with outstanding length of flavour and perfect balance. Drink now or cellar short term.

LTCf stands for 'little touch of cabernet franc'. This classic Bordeaux blend has plenty of rich and concentrated flavours with fine tannins.
