Ink Gin is a beautifully delicate modern Australian gin. Lemon myrtle & orange citrus, soft floral & fresh pine notes are followed by a spicy pepperberry finish. Pot distilled with a blend of 12 Australian native, traditional & exotic botanicals before being infused with an exotic blue flower which imparts smoothness and all natural indigo colour. The flower is pH sensitive, mixing from indigo to blush pink with the addition of tonic, lemon or lime.

A 100% rye made in Brunswick, Melbourne from all-Australian grain grown in the Mallee. Following double distillation the whisky is matured in a two-storey tall bespoke solera system composed of new American oak and x Australian wine barrels.

Gin is created using limonene, one of the main compounds found in cannabis plants. The limonene adds an ultra-rich profile to the spirit, mingling alongside notes of juniper, mandarin and lime, and finishing with soft spice. Limonene is also found in citrus peel and is said to have anti-inflammatory properties which can be used to relieve stress and naturally decrease anxiety and depression.

Sitting at a proper and well-integrated 43% abv, the recipe takes the clean, juniper-forward profile inspired by a classic London Dry style before layers of Esters own unique twistwith a punch of savoury citrus flavour and the judicious accent of locally grown botanicals.

Reminiscent of slow and salty days, Papa Salt is an easy-drinking gin made for sharing. Native Australian wattleseed and pink peppercorn are brightened with zesty wax flower, hibiscus, citrus peel and a hint of oyster shell. Have it short, tall or straight up.
