The Gospel Gospel Solera Australian Rye
Made using 100% Australian grown rye from a single farm in the Murray Mallee region of South Australia. The whiskey is aged in charred, new American oak barrels to embody the characteristics of traditional rye whiskey. Flavour notes: Sweet allspice, clove and pepper followed by dried red fruit and creme caramel.

The Aisling Distillery Riverina Rum
This rum is from 2016 harvest molasses that has been aged in 3 x 225 litre, uncharred shiraz casks. Consists of Cask Number 81,83 & 87. Bottled in April 2021 at 47.5% Alc it is a numbered release. With an initial limited release of 700 bottles. Colour: Our Rum is crimson red to rich brown and caramel, aged in uncharred Shiraz Casks from a locally sourced Riverina Winery for 4 years, it contains natural colouring and flavouring from the casks with a rich molasses finish. Nose: When you raise your nose into a glass of our Riverina Rum, the moment before the flavours deluge into your mouth, your mind will often race through a life time of memories. This can be in ways of flavour that take you back to childhood Christmases, or drinking with your buddies (we’ve all got them). Whatever it brings to mind, the smell of rum activates parts of our emotional senses in our lives both past and present. Santisima Trinidad 15 Year Old Cuban Rum
Santisima Trinidad 15 Year Old Rum is the result of three stages of ageing. Firstly, liquors are aged for at least 4 years before being blended into the base rums. Base rums are distilled from cane sugar and ages for 3, 7 or 25 years. This new 15-year-old rum is further barrel aged, rounding out the profile.Dark amber in appearance with aged, Santisima 15 Year Old has woody notes, toasty nuances and dried fruit aromas. The flavour is long, combining sweetness and a slight bitterness well integrated with almond and walnut flavours.

Although the nurturing process has evolved, it all began with the nurturing process called Sistema Solera. This process implies the integration of young and old rums, as they mellow for years in white oak barrels. They are the first family that produced Guatemalan rum, nowadays they continue producing one of the worlds finest quality rums. Solera 1893 and Reserva high quality rums have won many worldwide awards for their intricacy, profundity and signature sweet flavour.
