Four Pillars sourced olive leaf and olive oil from Cobram Estate, in northern Victoria after visiting Cobram Estate during olive harvest. Using olive leaf and oil from the Picual, Hojiblanca and Coratina varieties. The aroma, flavour and texture of fresh olive is stunning, and they did a year of trials before finalising the recipe for this gin.The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. They clearly embraced it, given how the infamous Mad Men had such a taste for it 80 years later in the 1960s Manhattan advertising scene. The Old Fashioned has had a makeover or two over its time. But this smooth, bitter, sweet simplicity of Bulleit Straight Bourbon Whiskey, traditional Angostura Bitters, and sugar cane syrup is a tonic that Don Draper himself would approve of.Serving Suggestions:Serve Dr Onyx Old Fashioned gently swirled in a short glass over ice, with a twist of orange zest. This bottle makes up a part of their "Transcaribbean Rum Line", a series designed to showcase the flavours of the Caribbean region.This bottle looks to develop the high ester flavours of Jamaican rum as well as the rich and fruity aromas from the Dominican Republic. It also goes one step further and encapsulates a roundness from Spanish-style spirit.Notes of soft gingerbread and spice throughout this bottle, excellent for both cocktails and on the rocks sipping.
