Starward Wine Cask Single Malt Whisky is uniquely Australian, crafted exclusively with local wine barrels for maturation resulting in a Whisky with balanced aromas of raisins, bananas and a touch of balsamic lead to clove, toffee and nougat. The palate is filled with red berries, hints of cinnamon and a variety of savoury and spice driven notes. A long, dry and tannic finish guides a strong linear reach through the palate, balancing a generous roundness and oiliness of the spirit.

A cold brew method is used to extract the natural oils to give a strong and refined coffee flavour perfect for so many occasions.Aroma: Bold and intense aromas of freshly ground roasted coffee beans, coffee oil and burnt toffee.Tasting Notes: Intense flavours of ristretto with bitter oily coffee and earthy tones of anise and spices, that linger through to a long and bold coffee finish.

To create this truly unique whisky, we selectively sourced rare malted rye and the finest malted barley from progressive malt houses, paired them with virgin American oak casks air-dried for 36 months and let it all mature in the maritime air of coastal Sydney. Our preference for malted rye over the far more commonly used unmalted rye affords this whisky a point of distinction evident upon the very first sip. This layered, aromatic spirit offers notes of spiced custard, ginger, stone fruit and baked apple pie with a fresh herbal finish that lingers on the palate.

A delicate gin that is Juniper forward, with some soft citrus & floral notes up front. The pallet is crisp and peppery off the back of fresh Celery Leaf, Cubeb Pepper Berries and Grains of Paradise. This unique dry style Gin is delicately infused with local artisan honey and Australian native botanicals. Craft distilled on the farm in small batches using only natural ingredients and honey from our hives right on the farm in Tyagarah.
