This tartness is balanced by an explosion of berries, cherries and jaboticaba, otherwise known as the Brazilian grape tree. And it wouldnt be Ink Gin if it didnt star a vibrant floral infusion. The final ingredient is native Australian rosella flowers. The rosella flower, a hibiscus found in the tropical northern parts of Australia, is vibrant in colour and has a crisp, tart flavour. Eddie’s grandmother Shirley aka ‘Shirl the Pearl’ was a pocket rocket. Adventurer, skier, and one of Australia’s first female pilots, Shirl also made a mean bootleg Cumquat Gin. Inspired by Shirl, we steep locally grown Cumquats in our Brookie’s Dry Gin for several months and balance the spirit to create springtime in a glass! This is her recipe and an ode to Shirl the Pearl.

Made using 100% Australian grown rye from a single farm in the Murray Mallee region of South Australia. The whiskey is aged in charred, new American oak barrels to embody the characteristics of traditional rye whiskey. Flavour notes: Sweet allspice, clove and pepper followed by dried red fruit and creme caramel.
