Bremerton Dulcie Sparking Chardonnay Pinot Noir South Australia Non-Vintage
This sparkling wine is named after our grandmother Merle "Dulcie" Spry also affectionately known as Granny Cookie. It has been made from a blend of Chardonnay and Pinot Noir. The wine shows a fine bead with a lifted floral aroma and fresh fruit forward palate with subtle yeast characteristic, it finishes with a refreshing touch of apple and citrus.

Winemaking This is a blend of 90% Chardonnay and 10% Pinot Noir fruit sourced entirely from the Napoleone Vineyard in the Yarra Valley. Each bottling represents a blend, being one part from the grandfather base tank (the oldest element being 2010) along with one part from the current vintage. The wine sees full MLF, as well as small injections of new oak and brandy spirit. Appearance Pale gold in appearance with a fine persistent bead. Bouquet Aromas of citrus fruits and subtle apricot, complemented by a doughy, bready complexity. Palate Fresh and vibrant with a focused palate structure of apple blossom and citrus characters with complex brioche notes.

This Gold medal-winning Sparkling Shiraz has been sourced from McLaren Vale and Langhorne Creek vineyards and has lovely smoothness thanks to ageing in old French oak. Deep garnet with a touch of brick, it presents lifted cassis, olive, plum and beetroot aromas. Vibrant and layered, the palate has a refreshing mix of sweet red fruits with touches of spice, juicy texture, firm tannins and generous length.

Aromas of toasty brioche and delicate citrus subtly emerge from the fine beads. Full and crisp flavours of apples with lengthy creamy structure. Fine and subtle.
Pirie Sparkling Non-Vintage
This sparkling wine is a pale straw/gold colour with a fine and persistent bead. Bready and biscuity autolysis notes from lees ageing are balanced by crisp apples and citrus lift. Vibrant lemony acidity adds drive to a full and rich mid-palate, vigorous mousse and a slaty, mineral persisting finish. 'The texture is soft and swirling, a real triumph.
