Sourced from vineyards in Lenswood and Balhannah and then fermented in a combination of one and two year old French oak as well as stainless steel. Petaluma have access to some of South Australia's premier vineyard sites which are put to impressive use here with their White Label Pinot Gris. 100% sourced from the Adelaide Hills, yet four vineyards are used to create this delicious white; two in the Piccadilly Valley, one near Balhannah and one near Lenswood. Only the very best fruit was selected and left to ferment in older French barriques, the resulting wine has a classic cool-climate backbone with racy acidity and depth of flavour on the palate.

Sourced and grown in the Adelaide Hills, this is a fine example of how good Chardonnay from this region can be. This is a blend of 3 different cultivars of the Chardonnay grape. Bunch pressed and in part wild fermented. Partial malolactic fermentation imparts further complexity. A beautifully textured and complex wine.

Uncompromising varietal purity is joined by secondary complexities as baked almond pastry and subtle spice reveal time in oak with elegance and subtlety. Palate Terrific natural acidity is cut with lemon curd, natural yoghurt and crème fraiche. The gentle layering of secondary elements (hazelnut, biscuit and almond meal) builds shape and body. Pristine fruit and impeccable oak yield linearity and focus to a palate with stunning length and persistent, fine texture.

Penfolds Maxs Chardonnay is a tribute to former Chief Winemaker Max Schubert, a legend in Penfolds history. Pale straw in colour with green hues, this wine has a very nice textural and creamy palate with a soft line of acid fading ever so slowly to a distant palate horizon.

These traditional sparkling varieties of Chardonnay, Pinot Noir and Pinot Meunier are sourced from the cool climate Adelaide Hills, and are picked early to retain high natural acidity. Small batches of these low yielding grapes are gently pressed in stainless stell basket presses. Following primary and partial malolactic fermentation the inidividual parcels are bottled and inoculated with yeast and sugar to encourage secondary fermentation. The cuvee is fermented in the bottle to develop complexity for approximately four years. This is a dry style sparkling with minerality, a crisp acid backbone and layers of flowers, fruits and toasty savoury nuances.
