The third release in the Harmony Collection has been created in collaboration with Stella and Mary McCartney to celebrate the lush, fertile lands of Scotland that connect all those who have stood upon them for generations.​ The McCartney sisters' love of Scotland stems from their memories of summer days in amber fields at the family farm in the Scottish countryside. They describe nature as both energising and serene, contrasting qualities rekindled by this collaboration. This affinity with the land inspires joyful memories of family, sisterhood and community. The Macallan Whisky Mastery Team have taken inspiration from natural Scottish grasslands to create this distinctive expression, redolent of warm meadows and mature barley fields, with a rich, citrus scented finish, using a combination of both sherry seasoned oak and bourbon casks.

Rich, full-bodied and complex, XO combines the spicy aromas of oak and leather with the sweeter essences of flowers and ripe fruit. Well-balanced, the initial flourish is dominated by the powerful suggestion of pepper and rancio, which testify to the long years it has spent being aged.

Our Limited Release Ruby Pinot Cask Finish is a tantalisingly light and fruit-filled composition; a single malt whisky with notes of orange blossom and honeysuckle that embodies the characteristics of a crisp, Tasmanian spring morning. A combination of Port, Sherry, Bourbon, White Oak and Wine casks from our Bothwell Distillery were selected to complement the juicy flavours of vibrant berries from the finishing casks: Frogmore Creek’s ex-Ruby Pinot Noir fortified wine casks. With mouth-watering inflections of mandarin, maple and meadow honey, this is a compellingly crisp single malt whisky reminiscent of a springtime sunrise in the Tasmanian highlands. Mouthwatering mandarin, maple, meadow honey, macadamia, and marizipan. Bright and juicy notes of black cherry, orange blossom, and toasted oak, topped with vanilla bean whipped cream, just delicious.

The successor to one of our most celebrated and award-winning releases to date, our latest Muscat finish is a lavish and indulgent dram. Lark’s Head Distiller, Chris Thomson, hand selected the finest Muscat casks from Seppeltsfield Winery, to finish out this rich whisky. A moment of syrup and toffee pecan magic. Easily mistaken for ice cream topping, or a fine Tasmanian fig paste, with creamy mocha on the palate, and a long chocolate orange finish. Best served with friends after dinner. The colour alone will be a major head turner for many - almost as dark as tea, but it’s the way sherry combines with Arran’s superb distillate that makes this one of the real highlights of the new collection. Given enough air contact, the nose develops into a stunning drier-styled sherry hit: fresh from the bag dried apricots, pears in wine, orange zest, Turkish delight and bitter dark chocolate, plus a deft sprinkling of ginger, cinnamon and nutmeg complete a beautiful composition that carries through to the palate. Again, dried fruits rally, this time accenting prunes, apricots and fruit mince pie. There's a flash of succulence before the finish turns deliciously bittersweet with citrus peels, fig, light rancio, gingery warmth and late hints of fruit and nut chocolate. After maturing the whisky for 21 years, the Malt Master adds even warmer and richer flavours by uniquely finishing this single malt in first fill bourbon barrels that once contained rum from the Caribbean. The rum soaked cask infuses the aged whisky with a spicy warmth and indulgent vanilla and toffee sweetness, the character of the Caribbean shining through. This gives the whisky a sumptuous sweet intensity that is both rich and creamy yet still retains the unmistakable character of Glenfiddich.
