Corowa Characters celebrates the people behind the whisky made at Corowa Distillery in Corowa NSW. A very approachable, single malt, wine cask whisky that exhibits floral characters with honeycomb sweetness on the nose. The palate indicates the combination of French and American Oak influences and the sweetness follows through with good spirit integration.

After maturing for years in South Australian red wine casks, our Muscat Finish Whisky spends additional time in richly flavoured South Australian fortified wine casks. These European oak casks held muscat for at least 20 years, and impart bold flavours of dried fruit and fine tannin.

Growing up as market gardeners, there was always a passion for the best quality produce. This same passion has now developed into a fine single malt whisky. Hand crafted, barrel aged and matured. Made with the finest grade Australian barley. Packed and protected the same way we packed our prized produce. Sweet and fruity on the nose, a subtle woodiness and delicate malt finish. A modern yet balanced whisky suitable for all occassions.

This gin compliments the rough seas, celebrating our juniper-based spirit’s naval heritage. A nose of salty ocean breeze gives way to notes of native lime interplayed by seagrass. A combination of juniper distilled through maceration and vapour infusion creates a melody of depth and mouthfeel. Sweetness and elevated texture are provided by macadamia and vanilla. The lifted finish is stormed by ginger, grapefruit peel and salt as the drink takes sail, three sheets to the wind.

Nestled amongst coastal rainforest in the Byron Bay hinterland, our terroir is uniquely influenced by the powerful Pacific Ocean. 'The Original' is matured in American oak ex-bourbon casks and is a whisky true of its natural environment. The colour of a Byron Bay sunset. The palate offers soft vanilla, crème brulée and biscotti characters, layered over distinct notes of pear, coconut and buttery macadamia.

Adelaide brothers, Jon and Con Lioulios own and run Thirty Six Short Distillery from Virginia in South Australia, where they recently launched Australia's first Rakia - partly as a tribute to their late Macedonian father, Pando whose dream was to distil traditional Rakia. The venture is actually named after Pando’s suit size, '36 Short'. A 1200 litre copper pot still also bears his name. The brother's first single malt was released in late 2021, cut back with water sourced from an aquifer that runs directly underneath the distillery. The barrels are locally sourced, x-Shiraz, shaven and charred American oak barrels. This initial maturation is followed by further resting in x Bourbon barrels to add fruity notes, before the liquid is finally returned to the Shiraz casks for a finishing. Advanced in colour, it feels more like a sherry matured Scottish malt than a warm climate Australian whisky. Aromas of oak shavings, pepper, cocoa and a dry nuttiness confirm the wine character, as does the full-bodied delivery: Dried fruits come through at the middle; Cherry ripe chocolate leads the finish where sweeter Bourbon-like notes converge over the wood spices. Even if the oak is a bit overdone, especially after air contact, it's an undeniable success for a first edition. 45% Alc./Vol. Notes from the producers... NOSE: Sweet and fruity on the nose, with tart lime marmalade notes. A faint aroma of fresh cut pine and tropical fruit adds a delicate malt finish. TASTE: A warm roundness encompassing the whisky with character of a tangy dried fruit medley. A hint of vanilla bean, taking you on a long, sweet fruity journey. FINISH: A beautiful long finish with a taste of dried mixed fruit. Lingering with notes of apricot and peaches with a warming finish.

6x 100ml Tequila. Tequila: Mexican derived Tequila is traditionally served neat – without lime and salt. Mexicans save the lime, salt and Tequila combination for Margaritas – which happens to be one of our most popular cocktails. Silver is the Tequila of choice, which is made from the blue agave plant – larger in size and sweeter in aroma and taste, the blue agave is an important economic product of Jalisco, Mexico due to its role in producing and exporting Tequila. Tequila is known to aid digestion and help lower blood sugar. So, this is the perfect preparatory tonic for those with plans for a Mexican style feast. Serving Suggestions: Serve in a short glass over plenty of ice. Mix with soda and a squeeze of fresh lime, grapefruit soda, or fresh pineapple juice, or mix up your traditional Bloody Mary by using Tequila as the base. This little bottle of purity is perfectly proportioned to mix two cleansing Vodka Tonics. It’s also the main ingredient in various cocktails such as the Vodka Martini, Cosmopolitan, Screwdriver, Black or White Russian, Moscow Mule, and Bloody Mary. We’ve heard on the grapevine that Vodka is said to relieve tension better than a glass of wine – so we think it’s the perfect tonic to help you relax at the end of a busy day. It’s also known to have many other health benefits, so the first Russians to distill and enjoy it were clearly onto a good thing! 6x 100ml Gin. Gin: Sir Winston Churchill, Ian Fleming, Charles Dickens, Queen Elizabeth II, F. Scott Fitzgerald – if you’re a gin fan, you’re in smart and sophisticated company. Its earliest origins date back to the Middle Ages, since then the drink has evolved from a herbal medicine to the classic Gin that remains so popular today. Gin derives its predominant flavour from juniper berries (which are full of antioxidants) with perfectly balanced botanicals – so we think this is just the tonic for those who need a rejuvenating drink at the end of a busy day. Serving Suggestions: To serve, fill two tumblers with ice, fill glasses evenly with Dr Onyx Just Gin, top with a quality tonic water (we recommend Fever Tree) and a squeeze of fresh lime, dropping the lime into the glass. Speakeasy 500ml Dry Martini Dry Martini: Ernest Hemingway described the Martini best “I’ve never tasted anything so cool and clean…They make me feel civilised”. It was James Bond’s drink of choice where the catchphrase “shaken, not stirred” was introduced in Diamonds Are Forever (1956), and then incorrectly referred to as “stirred, not shaken” in You Only Live Twice (1967), to Bond’s response “Perfect”. The Martini rose to prominence during the 1950s and 60s when the ‘three-martini lunch’ was widespread. Whilst the stance on workplace drinking might have changed, our affection for the Martini hasn’t. An excellent tonic for those wanting to step back to a more sophisticated time. Serving Suggestions: To serve, pour Dr Onyx Dry Martini into a mixing glass filled with ice. Stir, and strain into a chilled martini glass.
